my class is havin a party soon, and we need to cook or bake any kind of italian food. could someone give me suggestions. thanks:)

Anise cookies
6 eggs
1 cup oil
1 cup sugar
1 teaspoon vanilla extract
2 tablespoons baking powder
4 cups flour
4-6 teaspoons aniseed
3/4 cup chopped walnuts

Beat eggs in large mixer bowl. Add oil, sugar and vanilla; mix well. Add baking powder and flour, stirring until moistened. Stir in aniseed and walnuts. Shape dough into 4 loaves on cookie sheet. Bake at 350 degrees for 30 minutes cut into slices while hot . Toast cut slices under broiler until light brown. cool on a wire rack. Yield 4 dozen.
Biscotti di anice (Italian translation)
6 uova
1 tazza olio
1 tazza zucchero
1 cucchiaino estratto di vaniglia
2 cucchiai lievito in polvere
4 tazze farina
4a6 cucchiaini semidi anice
3/4 tazze noci tritate

Sbattere le uova in una scodella grande. Aggiungere l'olio, lo zucchero e la vaniglia; mescolare bene. Aggiungere il lievuto in polvere e la farina, girando bene.
Mescolare dentro i semi di anice ele noci. Formare in 4 pani su una teglia. Cuocereal forno a 350 gradi per 30 minuti. Tagliare in fette mentre caldo. Tostare i lati affettati sotto la graticola finche dorati. Far rinfrescare. Porzioni: 48

The night before you have this class... If you have a crockpot, layer like this:

1 box frozen meatballs (about 15oz - Mama Lucia's are the best)
1 or 2 green squash (zucchini) cut into thick slices
8 oz fresh mushrooms (just wipe the dirt off with a damp papertowel and throw them in)
1 jar or can (about 26oz) of spaghetti sauce

Repeat that.... twice if there's room.... so get enough to do three layers for a large crockpot...

Then cook on low all night long and take it in the next day, plug it up in class to keep it warm and voila! You just made my Award Winning Meatballs :)

Bring in a loaf of Italian bread (sliced) to put next to the crockpot.

Make little mini pizzas. Buy pizza dough from your favorite pizzeria or buy it frozen in the grocery store. Slice up some roma tomatoes and some fresh mozzarella, and tear up some basil leaves. First roll out the pizza dough and cut it into biscuit sized circles. prick with fork several times to prevent the dough from puffing up. first bake the pizza dough for about 5-7 minutes at 325, and then when they come out of the oven, top with the tomato and the mozzarella. Bake until the cheese is bubbly and a little brown on top. after removing from the oven, put a bit of the basil on top of each pizza.

You've made an Italian classic, the Margharita pizza.

EASY ITALIAN CASSEROLE

1 lb. ground beef
1 (15 oz.) can tomato sauce
1 tsp. sugar
1/4 tsp. basil
1/4 tsp. pepper
1/2 c. milk
8 slices American cheese
1/2 c. chopped onion
1 can mushrooms, drained
1/2 tsp. oregano
1/4 tsp. salt
1 c. Bisquick
1 egg
1/4 c. Parmesan cheese

Cook and stir beef and onion until beef is brown; drain. Stir in tomato sauce, mushrooms, sugar, oregano, basil, salt and pepper. Heat to boiling, stirring constantly. Reduce heat and simmer uncovered for 10 minutes, stirring occasionally.
Heat oven to 400 degrees. Grease 9x9x2 pan. Mix Bisquick, milk and egg. Spread into pan. Top with 4 slices of cheese. Spoon beef mixture over cheese. Top with remaining cheese and sprinkle with Parmesan. Bake uncovered for 20 minutes.

NOTE: Sometimes I will omit the top four slices of American cheese and substitute grated Mozzarella cheese. Also I use ground turkey instead of ground beef; either tastes great.

Goulash(Gu-Lawsh)

1-2lbs of h-burger
1 med. onion
1 small greenpepper
1 small can of mushrooms
tsp of garlic powder
1/4 tsb salt
1/4 tsp pepper
1 tsp Italian Seasoning
1/4 cup sugar
1 can diced tomatoes
1 can speg. sauce
riggitoni noodles
1/2 bag Motz. Cheese

Add everything into the sauce except the noodles cause you want them in a seperate pan. Heat the sauce of course. Soften the noodles and your done. Made like spaghetti pretty much really simply.

Basic Italian Cookie: Many thanks to CEILW1 (that's her screen name), who very kindly posted this recipe on the Forum.
INGREDIENTS:
5 cups (500 g) flour
1 1/2 cups (150 g) sifted confectioners sugar
2 tablespoons baking powder
1 cup shortening (butter or whatever)
3 eggs
1 tablespoon vanilla, or you can add any flavoring you would like.
PREPARATION:
Sift flour and measure. Resift with sugar and baking powder into bowl. Cut in shortening until it looks like coarse cornmeal. I do this by hand because the dough is heavy for a mixer. Make a center in the flour, and add the eggs, and vanilla, mix and knead the dough well for about 5 minutes until smooth, adding a little more flour if it seems to soft and sticky.

Pinch off bits of the dough about the size of a small apricot, and form into desired shape. Place on greased cookie sheet 1 inch apart, and bake in hot 450 oven for 10 minutes until light golden brown. Watch carefully because they will burn easily. Makes 4 dozen cookies.

The frosting is made with egg whites.

At least 4 eggs whites just beaten until foamy, then add confectioners sugar, until you get a runny type of frosting, I would say like pancake batter, then add whatever flavors you want. I usually add anise oil, just a drop or two, You can also color this frosting. At Easter I color mine blue, green, pink, and white. Once the cookies are cold, toss them in the frosting, and set aside, it will form a hard surface on the cookie once dried.

One word of caution, never make this frosting if it is the lease bit damp outdoors, or in too hot of a kitchen. It just won't harden on the cookie. While the frosting is still damp you can add the colored sprinkle candy on them.

This basic dough also can be used to make sesame cookies: shape into fingers, and before baking dip in milk and then the sesame seeds. Bake as above.

a cheap thing to do is to get brucceli noodles... or any of those types of noodles that are quick to prepare. then you get a can of crushed and/or diced tomato and you cook the tomato with diced garlic, onion, and any other herbs you like, it's done when you push the tomato and it falls apart. Then you just mix it together, it takes 25-30 min to make. and you can make it in large quantaties.

Delicious Chicken Parm.

Take boneless, skinless chicken breast (thin sliced) and roll in flour then egg then bread crumbs. Fry in olive oil until browned. (Med heat, don't put chicken in until oil is hot). Remove breast and drain grease. Make pasta according to box. Get baking pan put pasta on bottom add some jar sauce, put chicken on pasta and sauce top with more sauce, put fresh mozz. cheese on top and bake until cheese melts.
