try the enter key and also there are three charts in the tool bar that you may choose from that will give you options.

You can't change the number of columns in Excel. It's fixed at 256. You can only change the width.
Position the cursor on the lines between the letters and drag them to the size you want.
Or select a column by clicking on the letter above it and choose (Format - Column - Width) from the menu.

If you click view, then page break preview it will show you where your page margins are. You can then drag the individual columns within that space left or right so that they fill the space as you need it. You can't tell it how big to make the page but you can change the width of columns and add page breaks if needed to suit your needs.

No I don't think you can change them. But the application is clever enough to guess the coverage of cell-usage at the time of printing...
