Cake flour contains less gluten than all-purpose flour and produces a more tender texture. Though results won't be the same, in an emergency, you can substitute 7/8 cup of all-purpose flour for one cup of cake flour.

All I every use & for everything is all-purpose flour. This cake flour thing is just that to make you buy another product. Been baking everything imaginable for many, many yrs.

I never buy cake flour, I think it is over priced! I measure the regular flour, then remove 2 tablespoons ( per cup of flour) and add 2 tablespoons of cornstarch. Works great!

Yes, it's good for "all purposes." I used to bake cakes with all purpose flour all the time.

Absolutely !! Use the reg. flour.
I never buy cake flour... you can simply add a little baking powder to the flour which is what cake flour has in it!

yes you can, but you should sift it so that only the finest part of the flour goes through. That's really the only difference between all-purpose (it is "rougher" texture) and cake flour.
