I sold a Gadget that does What you want,. Its called a Spiral Fry™ Potato Cutter (By Nemco) Look on ebay or on yahoo and you will find what you need. They cost about $200 and have two different type of blades that you can use. The other blade is for making Potato strings. Trust me, this is what your looking for, as long as its in your price range.

My mom bought one in England last year. It's called a "rotato". That is, of course, if you're looking for the gadget thing that you stick the potato on the spikes and turn the handle on the top to peel it into strings.
p.s. try frying or deep-frying the peeled potao skin..MmMmM so good.

Check out this link below... this gadget was made for apples, but works for potatoes too. If you want long stringy bits of potato, run the potato through once to peel... then again to get the stringy potato bits...
The bit that cores the apple is removable, so you can use it on potatoes.

It's called a mandolin-it's a bit like a cheese grater with interchangeable blades;one serrated so you can make lattices by slicing the potato first in one direction and then at right angles to the ridge you have just cut;and one straight to cut thin slices. You would get thin sticks or strings if you used the serated blade slicing in the same direction
