This is a Japanese candy, that is easy to make.

Imo-yokan (4 servings)


Ingredients

* 250g sweet potatoes

* 40g sugar

* 1 teaspoon Kanten powder

* Salt


Method

1. Lay a paper in a lunch box to harden.

2. Peel and cut the sweet potatoes then soak them in water for a while drain, put 200g of them into a bowl. Heat them in the microwave for 4 minutes.

3. Crush the hot sweet potatoes by using a whisk. Strain them in a strainer.

4. Put 3/4 cup water, sugar, Kanten powder and a little salt into the pan and put it on the heat. After boiling up, put the crushed sweet potatoes into the pan. Stir the sweet potatoes. After boiling up again, take it off the heat.

5. Cool the water in the pan by stirring it with a wooden spatula. After cooling down, put the sweet potatoes into the lunch box. Flatten and cool them. After hardening, cut them into four rectangle pieces and serve. Enjoy

Crunchy Parmesan Chicken Tenders

4 tablespoons plus 1/2 cup extra-virgin olive oil
1 cup buttermilk
1 1/2 pounds chicken tenders (about 18)
3 large garlic cloves, minced
1/2 teaspoon salt
3 tablespoons balsamic vinegar
Freshly ground black pepper
1 1/4 cups freshly grated Parmesan
3/4 cup Italian-style seasoned bread crumbs

Preheat the oven to 500 degrees F.

Brush 1 tablespoon of oil over each of 2 heavy large lined baking sheets. Place the buttermilk in a large bowl. Add the chicken tenders and stir to coat. Let stand at least 15 minutes and up to 30 minutes.

Meanwhile, mash the garlic with the salt in a medium bowl. Whisk in the vinegar and then the remaining 1/2 cup of oil. Season the vinaigrette, to taste, with pepper. Transfer the vinaigrette to a small serving bowl.

Stir the Parmesan and bread crumbs in a pie dish. Remove the chicken tenders from the buttermilk and dredge them in the bread crumb mixture to coat completely, pressing to adhere. Arrange the coated chicken tenders on the prepared baking sheets, spacing evenly. Drizzle the remaining 2 tablespoons of oil over the chicken tenders and bake until they are cooked through and golden brown, about 12 minutes.

Transfer the chicken tenders to a platter and serve the vinaigrette alongside for dipping.

I haven't made this one in a long time.

Latkes:

Grate up potatoes and onions and mix with just enough flour to coat everything very thinly. Add an egg to the mixture and make sure it gets thoroughly combined. Then put thin spoonfuls into a skillet filled with shallow oil (be sure to flatten out the spoonfuls, or the middle won't get cooked) and fry until golden brown and crispy.

Top with sour cream and cheese. Mmm

Cheesy Chilanda Casserole

Ingredients

(4 servings)

1 lb Ground Beef
1 ea Med. Bell Pepper, chopped
1 ea Clove Garlic, minced
16 oz Pinto Beans, drained
15 oz Tomato Sauce
1 c Picante Sauce, med. hot
1 ts Ground Cumin
1/2 ts Salt
12 ea Corn Tortillas
2 c Shredded Cheese
1 x Lettuce, shredded
1 x Sour Cream
1 x Fresh Tomato, chopped


Instructions

* Cheese may be Monterey Jack or Cheddar Brown meat with pepper, onion and garlic; drain. Add beans, tomato sauce, picante sauce, cumin and salt. Simmer 15 minutes. Spoon small amount of meat mixture in 13x9 baking dish. Top with 6 tortillas. Top with half the remaining meat mixture; sprinkle with cheese, repeat (except for cheese). Cover tightly with aluminum foil. Bake at 350" for 20 minutes. Remove foil and top with remaining cheese. Bake uncovered for 5 minutes. Top with lettuce, tomato, sour cream and additional picante sauce.

4 boneles skinless chicken breasts (frozen or thawed)
1 packet dry Italian salad dressing
4 oz. cream cheese-softened
1 can cream of mushroom soup
1 can cream of chicken soup
Cooked Rice

Put chicken in crockpot and sprinkle with Italian dressing. If frozen cook on low for about 8 hours. If thaw, low for about 4. Cooking times vary depending on crockpot and chicken size. After the chicken is cooked, mix the cream cheese and soup until all the lumps are gone. Pour over chicken and cook until warm, about 30 min. Pull chicken apart with 2 forks and serve over rice.

Uncle Jim’s German Potato Salad


6-8 red potatoes

3 hard boiled eggs

1 medium onion, finely sliced on green onions

6 slices bacon

1 tbsp. flour

1 tsp. chicken bouillon

½ cup water

2 tbsp. sugar

1 tbsp. parsley

salt and pepper to taste


Boil potatoes with instant chopped onion. Dice or slice potatoes in large bowl. Add eggs and onion. Cut bacon strips into small pieces and fry. Remove from pan, reserving grease. Add to potatoes. Add bacon grease to flour and stir until thick. Gradually add vinegar and water. Stir until smooth. Stir in sugar. Pour over potato mixture and season with salt, pepper, and parsley flakes.

this a recipe i absolutely love for a breakfast smoothie i got from the side of a kraft peanut better jar.
-1 ripened banana, peeled

Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some good red wine and enjoy.
