There is some tempurature at which protein starts to change state or cook as we call it. It might be around the 70 - 80 Degrees C mark. I would like to know what it is. And if it is different for different kind of proteins.

It differs protein to protein. Some denature at low temps and some at high temperatures. Bacteria live in the hottest environments on the planet, and their proteins don't denature.

A few bacteria can survive a temperature of 117 Celsius, so the proteins in them don't start to cook until you exceed this temperature.
