I dont eat red meat or chicken and Im tired of pasta. I'm rackin my brain for something new.

Try this..... if it's good invite me over 4 dinner :)

Italian Vegetable and Polenta Bake
Prep time: 16 minutes
Cook time: 45 minutes
Yields: 1 serving

Ingredients:

1 tablespoon olive oil

1/3 small eggplant, thinly sliced

2 chopped tomatoes

2 tablespoons chopped Vidalia onion

2 teaspoons chopped fresh basil

1/2 teaspoon minced garlic

1/8 teaspoon table salt

1/4 teaspoon granulated sugar

For the polenta:

1 1/4 cups water

1/4 teaspoon table salt

1/2 cup coarse cornmeal


Cooking spray

1 ounce fresh turnip greens or fresh spinach leaves

Directions:
1. Preheat oven to 400 degrees. Heat olive oil in a saucepan over low to medium heat and add next six ingredients. Allow mixture to simmer for 20 minutes. Add sugar.

2. For the polenta: In a separate saucepan heat water and salt to a boil. Add cornmeal gradually; stir until smooth. Remove from burner and allow mixture to cool for 5 minutes.

3. Coat a baking dish with cooking spray. Slice and remove polenta from saucepan and arrange half in a small baking dish. Top with half of the eggplant mixture, add rest of polenta, and top with remaining eggplant mixture. Bake for 20 to 22 minutes.

4. Immediately before serving, heat the greens in the microwave for 1 minute until just wilted and top with finished polenta vegetable bake.

Just go to a fast food place down the road & bring home a nice warm all ready made dinner.

And don't use any plates or silverwear-that way you'll have less clean up.

edit: I didn't see the reast of the question til after I posted.
How about some rice with veggies? You can add soy sauce or boullion for flavor.

Dice everything really small (not the toritallas of course)
Wrap in Toritalla

Its so yummy! IF you want to add more flavor add a guac spice pack and mush up your avacados. Even my kids love this..the avacado's act as your meat and its so healthy for you too.

Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some good red wine and enjoy.

or waffles or french toast with sausage links
scrambled eggs
or egg omlet
with jelly or butter toast
french fries and chicken steak
hot dogs with fries and beans
grilled cheese tomato soup
tuna sandwich with soup or prezels or chips
a pint of ice cream
spinach or broccoli white pizza or regular pizza

Pick up some firm tofu, marinate it in flavors you like (japanese, thai, italian, or just plain salt, pepper, vinegar and oil) and cook it up in a saute pan served with some veggies and/or rice. Delicious and satisfying.

Well, I had scrambled eggs with cheese, and wheat toast. But if you don't eat chickens, I am not sure you eat eggs or cheese....
