My bf's mom and sister are comming in so I asked what they like so I know what to make for dinner they will be here from Dec 15-28th and so far I have only gotten approval on a baked steak and herb chicken.
They are from the Bahamas and I know they cook a little different but I am just looking for easy recipies that will please everyone. I have been on recipie sites all day the bf is not very helpful

I asked him about a variety of things that I know I make well that we eat a lot at home such as stuffed bell peppers, homemade beef veggie soup and he just says she never made those for us so I doubt she will like them.

make the 2 dishes you have approval for then tell them you are going to treat them to the kinds of foods that are eaten where you live or where your grew up. Maybe even invite them to help you cook so they will give you ideas. Just make sure you are sincere in your request for them to join you in the kitchen. Everything will be fine.

My guess is that they will be open to trying new things while they are away from home, as long as it seems reasonable.

If you want things that seem familiar to them, fish is probably a good choice. They would also be comfortable with rice dishes. you won't find a lot of cooking references for the Bahamas, but you will find a huge amount about Caribbean food and Cuban food. I realize that the Bahamas are somewhat more "British" than other countries in the ares, but these ideas would give you a good start.

If your budget allows it, they might enjoy a few nights eating out in various restaurants where you live.

I like a hearty salad - like roasted beets, blue cheese, regular or sweetened nuts and a citrus/mint vinagrette. Easy and you can make the beets and dressing ahead of time.

Also, homemade soups are terrific and always satisfying. Also, a soup and salad is a real simple, traditional meal that very few people make anymore!

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.

Here are two pasta recipes my husband and I like. For either use your favorite pasta and feel free to add extras. I like to use bow tie past and add chicken and broccoli.

Butter and Parmesan Sauce

1/2c (1 stick) unsalted butter at room temperature
3/4c freshly grated Parmesan cheese (I have used the pregrated cheese and it works well)
1/2tsp salt (or to taste)
Lots of freshly ground pepper

1. Combine butter, cheese, salt, and pepper in a metal or glass bowl. Ste aside to warm to room temp or place the bowl over the pasta pot to melt butter while heating the water. Once the water comes to a boil, remove bowl and set aside. (I prefer putting the bowl on the pot to melt the butter)

2. Cook pasta until al dente. Drain well and immediately combine with cheese sauce. Serve at once with extra cheese and pepper.


Creamy Garlic and Herb Sauce

1 package (about 5 oz) garlic and herb cheese spread crumbled at room temp.
1/4c freshly grated Parmesan (or pregrated) cheese
1/2 pound fresh, ripe tomatoes, seeded and coarsely diced
1 tsp salt or to taste
Freshly ground pepper
1/4 c snipped fresh chives
1/4 c fresh flat leaf parsley chopped

1. Combine cheese spread, parmesan cheese, tomatoes, salt, and pepper in a metal or glass bowl. Set aside to warm to room temp or place over pasta pot to melt butter as water warms. Remove once water comes to a boil.

2. Cook pasta until al dente. Drain pasta well, reserving about 1/4 cup hot pasta water, and immediately add pasta to sauce. Sprinkle with chives and parsley and toss adding about 1 to 2 tablespoons of the reserved water, if necessary for creaminess. Serve at once with extra Parmesan cheese and pepper.
