White Chocolate
White chocolate originates from the cocoa (cacao) plant, but it is not 'chocolate.' According to the FDA, to be called 'chocolate' a product must contain chocolate liquor, which is what gives it the biter intense chocolate flavor (and color) to dark and milk chocolates.

White chocolate contains cocoa butter, milk solids, sugar, lecithin and flavorings (usually including vanilla). Cocoa butter is the fat from cocoa beans, extracted from the cocoa beans during the process of making chocolate and cocoa powder. Cocoa butter has very little 'chocolate' flavor.

Cocoa butter is one of the ingredients used to make real chocolate, it is gives chocolate the ability to remain solid at room temperature, yet melt easily in the mouth.

Cocoa butter is one of the most stable fats known, containing natural antioxidants that prevent rancidity and give it a storage life of 2 to 5 years. It is used for its smooth texture in foods (including chocolate) and in cosmetics and soaps.

Cocoa butter is the ingredient used in other chocolates so that they remain solid at room temperature yet melt easily in the mouth. Thus, white chocolate has a texture like that of chocolate but does not have the same taste. Unlike chocolate it does not contain caffeine.

Right now everyone is talking percentages in chocolate. A 65% or 75% chocolate bar. What they are talking about is the percentage of cocoa solids (mass) to cocoa butter. The darker the bar, the less cocoa butter and the more bitter it will usually be. Think of cocoa butter as crisco shortening and cocoa solids(mass)as cocoa powder in brick form.

For white chocolate there is only cocoa butter (crisco) but it has milk, vanilla, sugar, and a bunch of other stuff to make it taste good (kinda).
For milk chocolate: There is lots of cocoa butter (crisco), some cocoa solids (pressed powder), milk, vanilla, sugar, and other stuff.
For semi sweet & dark: There are between 50% & 80% cocoa solids (pressed powder) and the rest is cocoa butter (crisco), vanilla, sugar, and other stuff.
For unsweetened: it is almost all cocoa solids, a bit of cocoa butter, some vanilla, and a bit of other stuff.

To even be considered chocolate, there has to be some cocoa solids present, in the case of "white chocolate", this is not true. They call it white chocolate to differentiate it from candy coating which has no cocoa butter in it at all. White Chocolate is not really chocolate, it is a confection made with milk products, sugar and cocoa butter, the name white chocolate is just a term, but there are different types and qualitys of white chocolate, Swiss and France are better the domextic is a lesser product, better for used as coating, When I was a chef I used to make ice cream and mousse with it, some people want the chocolate taste and are disappointed when it has little flavour of chocolate.

White Chocolate is everthing that is is normal chocolate except the cocoa powder, it has cocoa butter and milk solids etc , just no brown stuff added

I am always surprised to see white chocolate, but it's really chocolate turned white somehow. Maybe someone will tell us how they do it!

basically, sugar and like egg or something. I know it's not completely real chocolate. And I also know it has milk in it so if you're lactose intolerant, don't get

white chocolate is actually cocoa butter in a solid form. at least... the pure stuff is. the stuff you get in a foil wrap at the local drug store is flavored parafin!
