Cheesy Chilanda Casserole
Ingredients
(4 servings)
1 lb Ground Beef
1 ea Med. Bell Pepper, chopped
1 ea Clove Garlic, minced
16 oz Pinto Beans, drained
15 oz Tomato Sauce
1 c Picante Sauce, med. hot
1 ts Ground Cumin
1/2 ts Salt
12 ea Corn Tortillas
2 c Shredded Cheese
1 x Lettuce, shredded
1 x Sour Cream
1 x Fresh Tomato, chopped
Instructions
* Cheese may be Monterey Jack or Cheddar Brown meat with pepper, onion and garlic; drain. Add beans, tomato sauce, picante sauce, cumin and salt. Simmer 15 minutes. Spoon small amount of meat mixture in 13x9 baking dish. Top with 6 tortillas. Top with half the remaining meat mixture; sprinkle with cheese, repeat (except for cheese). Cover tightly with aluminum foil. Bake at 350" for 20 minutes. Remove foil and top with remaining cheese. Bake uncovered for 5 minutes. Top with lettuce, tomato, sour cream and additional picante sauce.

Cheesy Sausage Casserole
INGREDIENTS
1 pound fresh, ground pork sausage
1 onion, thinly sliced
1 1/2 cups Cheddar cheese, shredded
4 slices bread
6 eggs
2 cups milk
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
In a skillet, brown the sausage, drain and place in a square casserole dish. Cover top of sausage with onion slices. Cover top of onion with cheese. Place 4 slices of bread on top of the cheese. Bread should fit exactly to cover top of the dish.
Mix eggs and milk in a bowl and slowly pour over top of bread, mixture should fill dish almost to the top.
Bake in a preheated oven for 45 minutes.

"Brunch Quiche" - 10 to 12 servings
2 cups uncooked elbow macaroni
6 to 8 slices bacon; chopped
2 cups shredded American cheese
2 cups shredded Monterey Jack cheese
2 cups soft bread crumbs
1 medium onion; finely chopped
1 small green bell pepper; finely chopped
4 eggs; separated
2 cups milk
1 tsp. salt
6 to 8 drops bottled hot pepper sauce
Red salsa (optional)
Prepare macaroni according to package directions; drain. In medium skillet, cook bacon until crisp; drain.
In large bowl, combine macaroni, bacon, cheeses, bread cubes, onion and green pepper. In medium bowl, beat together egg yolks, milk, salt and hot pepper sauce; add to macaroni mixture and mix well. In large bowl, beat egg whites until stiff; fold into macaroni mixture. Pour into buttered 12" quiche dish or 13x9" baking dish. Place a shallow baking dish with 1 to 2" water on lowest rack of 325* oven. Place quiche on center rack; bake until set and knife inserted in center comes out clean, about 1 hour. Let stand 5 minutes before cutting. Serve with salsa, if desired.

1 pound ground beef
2 cups noodles (smaller noodles, whatever you prefer)
1 can of cheese soup (like from Campbell's)
1 can beef broth (like from Campbell's)
1/2 cup ketchup.
Brown beef, drain. Add other ingredients and boil for about 10 minutes or until noodles are soft.
