Mexican wedding cookies are really good and easy...
1 c unsalted butter, room temp
1/2 c confectioners sugar, plus more for coating cookies
1 teaspoon vanilla
1 3/4 c all purpose flour, plus for dusting hands
1 c chopped pecans
preheat oven 300
cream butter and sugar until smooth. beat in vanilla, add flour, mix in pecans. take about a tablespoon of dough and u can make crescent shapes or just flat circles. places on Cookie sheet with parchment paper. bake 40 minutes . after there done dip in powdered sugar while warm, and let cool. they are so good. i don't know if they will make it to the party!!
