I made this for the first time at Thanksgiving. It was a big hit.
Marlborough Pie
Unbaked 9" pie shell
1 cup unsweetened applesauce
3 tablespoons lemon juice
1/2 teaspoon lemon peel
1 cup sugar
4 eggs, slightly unsweetened
2 tablespoons butter, melted
1/2 teaspoon salt
Chill pie shell while preparing filling.
Combine applecause, lemon juice and peel, sugar, eggs, butter, and salt. Blend thoroughly and pour into patry-lined pie pan.
Bake in very hot oven (450 F) 15 minutes; reduce heat to 350 F and bake 10 to 15 minutes longer, or until silver knife inserted halfway between center and edge of pice comes out clean. Cool on rack.
