Best time to Korea and Beijing is the fall. I suggest late fall like mid to late October. There are a couple of reasons. First, you fly cheap because that is the low season for going to Asia for most airlines. Two, you avoid the heat of both countries. (Don't worry about cold, nowadays, Beijing and Korea don't get to below 10C until mid-November. For Beijing, I don't suggest you go before the Chinese National Day Long Holidays (Oct. 1 - 7). Go after that time when all the hotel rates drop and transportations are easy to get.

Beijing is my hometown! The best time to Beijing is Spring (April and May) and Autumn (September and October), however early Spring sometimes there is sandstorms. Also put in mind, May 1(the Labor Day) and Oct 1(the National Day) both are one week long holiday and everywhere is crowded.
It's cheaper to go to Beijing in Summer and Winter. If you don't mind a little bit hot or cold, then you can get a pretty good deal on hotels.

Have to agree with Tao. I've been to Korea in both the spring and the fall. I needed a jacket at night during the spring, but the weather was gorgeous in the fall - no jacket required. Beijing usually has better weather in the fall than in the spring when you occassionally get days when the temperature changes dramatically from warm to cold and back again.

Spring or Fall. Summer is the rainy season in Korea and winter is pretty cold. Spring and Fall are pleasant. October is pretty ideal, and April isn't bad either. The only downside to spring in Korea and Beijing is the sandstorms that happen a few times in March and April.

Autumn is the best time to come to Korea. I can't speak for China.
During the autumn season the leaves change colors this can be very beautiful in mountainous areas. Or near Temples.
I would suggest seeing Suraksan mountain when the leaves are in bloom.
