The descriptions are pretty literal. Tablets that are 'controlled release' will be let into the blood stream gradually, whilst 'Rapid realease' are let into the blood stream very quickly - giving an almost immediate effect.
It is for this reason that it is very dangerous to crush tablets (ie for an elderly patient who has difficulty swallowing). You could make a pill designed to release a drug slowly enter the blood stream (and therefore the vital organs) much quicker and violently than intended, causing harm.
