How do I adjust the temperature and the time?
I made a persimmon pudding, kind of like dessert bars; it was delicious but got burned around the edges in the glass pan. Do I have to buy a metal one, or can I adjust the time and temperature to make it turn out right?

I live in California and I have a Fuyu (Japanese) persimmon tree. I like to eat them firm, like an apple, they are already sweet. But for baking I use the mushy ones.

Lower the temperature, a glass pan should usually not go above 425. So you'll need to lower it if it is above that, if not you'll be okay. For every 25 degrees you turn the oven down, give it an extra 10 +/- minutes. Just keep checking it.

I would watch the time but not buy a new pan. Do not adjust the temp. Just set the alarm for 5 minutes less than the desired time and then watch it. You can always add more time but can't take it away.

I agree, lower you temp a little and cook it a little longer. Another solution is to put tinfoil over the edges. Persimmon pudding sounds yummy. Are you a Hoosier?

I Have never had the metal verses glass pan make any difference at all. Is it possible there was some other reason? A strange/new oven for example? There should be no difference because of the glass verses metal pan angle....

Just lower your temp by 25 degrees. You might have to cook it a few minutes longer, but it won't be burnt.

decrease the cooking time by about 10 minutes (checking at that time to see if it is done) or decrease the temp by about 25 degrees.

Glass is easier to clean.
