I am feeding 3 adults and 2 children. I was wondering if anyone had some good recipes that are simple because I was trying to find something different than the normal dinners that I would usually make.

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

Try a moussaka.

Buy a packet mix for the spices, it's easier.

You will need a couple of pounds of minced lamb. (I get my butcher to mince some cheap cuts. Far better than supermarket packs|), a medium onion chopped, sliced aubergines or potatoes and a simple white cheese sauce.

Fry the meat and onions in a little olive oil until the meat is browned and the onion clear. Add the mix in 1/2 pint water. and cook for a while until much of the liquid is gone. I personally add a large dollop of tomato puree. If using aubergines slice them and sprinkle with salt. Leave standing for 15 - 20 minutes then pat off the moisture. Do it on both sides. If using potato slice thinly. Spoon some of the meat into an ovenproof, shallow dish, and place a layer of potato/aubergine on top. Then another layer of meat and finish with more potato/aubergine. Allow the cheese sauce to thicken and pour over the top, sprinkling a little grated cheese on top. Bake at 1780C in the middle of an oven for 30/40 minutes. Serve with a mixed salad of lettuce, tomato, cucumber, mixed peppers and chopped onion drizzled with olive oil. Serve with crusty bread. Delicious.

I dont know if this recipe might like but try it. My kids love it and friends from work

Chicken thighs or breasts
3 tomatoes
half and onion
2 garlic cloves
1/2 cup of sour cream
celery
red, grean and yellow peppers ( sliced lengthwise )
salt, pepper, and italian seasoning

Put the chicken in a pan, chop the tomatoes, onion, garlic and celery and add it to the chicken. Add the salt, pepper, sour cream and seasoning to it and let it cook for 20 min. When the chicken is ready add the peppers and cover it for 3 min
Serve immediately with white rice and shredded cheese.

Enchilada Casserole

Mix 1-1.5 lb hamburger with 2 large cans refried beans and a packet of taco seasoning and a little enchilada sauce. Pour enchilada sauce on the bottom of a 9X13, then layer corn tortillas and hamburger mixture with cheddar cheese a couple times, putting sauce over the tortillas each time. Top with sauce, olives, and cheese and bake at 350 for about 30 minutes. Great served with rice.

Boneless skinless chicken, rice and cream of chicken soup all in a baking dish!!! Yum. Or flatten some grands biscuits, add pizza sauce and some pepperoni and mozz.cheese..bake...yum-oh..individual pizzas.

mmm tomato chicken parmesan. that's what i'm making tonight! for 5 people too. it only takes about 45 minutes and is original but not very hard to make.
