I need a recipe for royal icing (used on sugar cookies). It hardens after decorating.

Beat 2 egg whites until they are foamy and then add a tsp of lemon juice. Then add 4 1/2 cups of powdered sugar one half cup at a time. If it is too stiff, add water (but only a little at a time) and if it is too runny, add more powdered sugar. This works best in a food processer (or that's how I make it anyways.)

To color it, I'd use gel food coloring since it doesn't dilute your mixture like liquid does. Also, the icing is white because of the powdered sugar so you need a lot of food coloring so it's not pastel.

Royal Icing for Sugar Cookies (from Martha Stewart)

Makes 2 1/3 cups

One 1-pound box confectioners' sugar
5 tablespoons meringue powder or 2 large egg whites

1. In the bowl of an electric mixer fitted with the paddle attachment, combine sugar and meringue powder. Mixing on low speed, add a scant 1/2 cup water. For a thinner consistency, usually used for flooding, add more water. A thicker consistency is generally used for outlining and adding details. Mix until icing holds a ribbon-like trail on the surface of the mixture for 5 seconds when you raise the paddle.

Royal Icing Glaze For Painting Cookies

Ingredients

2 c powdered sugar; sifted
1/4 c warm water
4 ts meringue powder
1/4 ts cream of tartar

Instructions

Combine all ingredients into a small mixing bowl. Beat with an electric mixer on low speed till combined, then on high speed for 7 to 10 min. or till stiff. Add 1 to 2 tablespoons additional warm water, 1 teaspoon at a time, till of glazing consistency. Use at once Spread each cookie almost to edge with glaze. Let dry on wire rack at least 4 hours or till completely dry. Paint as desired.
