Clootie dumpling.

Lovely with custard for pudding. Even nicer sliced up and fried with your bacon and eggs next morning!

My mum always used to put a sixpence in the mixture before cooking it. Luckily no one broke any teeth.

Clootie Dumpling is not quite the same as traditional Christmas pudding......it's much better! My gran used to make one for all of our birthdays and put coins in it. You could do anything with it, eat it sliced hot, cold, with or without anything on it..even butter, fry it for breakfast with potato scones, bacon & eggs etc, toast it....I don't think Christmas pudding is that versatile.

Anyway, my gran taught me how to make it! In a huge bowl you had to mix all the ingredients, then turn a cotton pillowcase inside out, dust it, dump the mixture into it, tie it up with string and boil it for hours. When finished boiling, we then used to sit in in front of the fire so the outside would harden and form a skin.
I've made it several times myself and everyone loved it. Sadly, I lost the recipe a few years ago but I still know all the ingredients, just not the quantities!!!
