I'm of German heritage, so I'm big on doing ethnic baking once a year. Here are three cookies of German origin that I have baked this year, or have baked in the past.
Ffeffernusse (Pepper Nuts)
¾ cup butter or margarine, softened
1 cup sugar
1 cup dark corn syrup
2 teaspoons anise seeds
1 teaspoon pepper
1 teaspoon baking soda
¼ teaspoon ground allspice
¼ teaspoon ground cardamom
¼ teaspoon ground cloves
¼ teaspoon salt
4 ½ cups flour
Sifted powdered sugar
Beat butter at medium speed until creamy; gradually add 1cup sugar, beating well. Add corn syrup and next 8 ingredients; beat at low speed until well blended. Gradually add 4 cups of flour to butter mixture, beating at low speed until blended after each addition. Stir in enough remaining flour to form a stiff dough. Cover; chill for 3-4 hours. Divide dough into 8 portions; roll each portion into a ½” thick rope. Cut ropes into 1” lengths, and place 2” apart on ungreased baking sheets. Bake at 350 degrees for 10-15 minutes or until golden. Remove to wire racks to cool. Roll in powdered sugar.
Zimtsterne (Cinnamon Stars)
3 tablespoons butter or margarine
1 ½ cups sugar
2 whole eggs
1 egg, separated
1 teaspoon lemon juice
2 1/3 cups all-purpose flour
2 ½ teaspoons baking powder
1 ¼ teaspoons cinnamon
¼ teaspoon nutmeg
½ cup finely chopped walnuts
Heat oven to 375 degrees. Mix butter, sugar, 2 whole eggs, 1 egg yolk, and lemon juice until fluffy. Measure out flour. Stir dry ingredients together; blend into sugar mixture. Stir in nuts. Roll dough, 1/3 at a time, to 1/16” thick on lightly floured board. Cut with a star cutter. Brush tops of cookies with remaining egg white beaten until frothy. Bake on lightly greased baking sheet 6 to 8 minutes. Makes 6 to 9 dozen cookies, depending on size of cookies.
Berlinerkranzer (Berlin Wreaths)
1 ½ cups butter shortening (like buttery Crisco)
1 cup sugar
2 teaspoons grated orange rind
2 eggs
4 cups all-purpose flour
1 egg white
2 tablespoons sugar
Red candied cherries
Green citron
Mix shortening, 1 cup sugar, rind, and eggs thoroughly. Stir in flour. Chill dough. Heat oven to 400 degrees. Break off small pieces of dough, about 6” long and ¼” thick. (If rich dough splits apart or seems crumbly, let it warm or work in a few drops of liquid until the dough sticks together.) Form each piece into a circle, bringing one end over and through in a single knot. Leave ½” end on each side. Place on ungreased baking sheet. Beat egg white until frothy; gradually beat in 2 teaspoons of sugar; brush tops with this meringue. Press bits of red candied cherries on center of knot for holiday berries. Add little jagged leaves cut out of green citron. Bake 10 to 12 minutes, or until set but not brown. Makes about 6 dozen 2” cookies.

sugar cookies are my all time favorite. This year we are baking chocolate chip and toffee cookies, the peanut butter cookies with the hershey kiss in the middle, ginger snaps, and some cookies that you twist together to look like candy canes.
Im baking with a very good friend of mine this year, we are going to make loads of cookies, and I cannot wait!

Ginger Biscuits
Ingredients
2 oz vegan margarine
1 oz sugar
4oz flour
1 teaspoon ground ginger
Blend the margarine with the sugar until it is a smooth paste. Add the ginger and flour and blend thoroughly. If it too dry add a teaspoon of water - it should come together in a dough. Roll out on a floured surface and cut out using a cookie cutter. Place on a greased baking sheet in a 200 degree oven for 10 minutes or until golden brown.

I just did my christmas baking on Saturday. I made about 800 cookies all total plus 4 sheets of peppermint bark.
I made pignoli cookies, 7 layers, chocolate crackler, peanut butter, spritz & oatmeal raisin.

My mom'll probably leave it up to me and my sister. But the staples usually are butterscotch -a-roos, chocolate chip, frosted cut-outs.
Have you tried andes candies cookies? They're really good and easy. Grab a refrigerated roll of Pillsbury dough, crumble up several andes candies chocolate-mints in the dough. Once the cookies come out of the oven, mix up some frosting and add a few drops of green(remember, the less green drops you add, the lighter it will be) to it.
Then cut diagonal several more andes candies. Frost the cookies with the green frosting. Then place a piece of andes candies on each.
Yumm! If you have a sweet tooth, you'll enjoy these.

peanut butter, ch chip, pb kisses, peppermint cookies, italian cookies, homemade cannolis, pb fudge, molasses cookies, mini pb cup cookies.. and probably some more depending on time!
