Named for the German town of Braunschweig, this smoked liver sausage enriched with eggs and milk is the most famous of the liverwursts.
The meat has a very soft, spread-like texture and a distinctive liver-based flavor. It is usually used as a filling for sandwiches, often paired with stone-ground mustard, sliced tomatoes and cheese. There are also a few recipes for pâté and cheese balls which use braunschweiger as a primary ingredient.

Braunschweiger is liverwurst. A kind of pate. Especiall nice spread on lightly toasted slices of French bread. Ideal for cocktail parites or snacks. I always like adding a little pepper and a drop of lemon.

Yes, don't cook it. Just slice it and eat. Some people put it in a sandwich or eat it with crackers. It is very fatty and has a lot of cholesterol (Liver has a lot of cholesterol) On the flip side, it has a good amount of b vitamins in it. It is good stuff, very rich - usually just a small amount is eaten at a time.

i like to dice it up and fry it in lard, then beat up some eggs and put them in with the braunschweiger, toss in a bit of diced cooked bacon and spinach....mmmmmm that s a super healthy meal and great flavor combos

I love the stuff (I've only had the kind without bacon). It's almost a pate thing, but from the name (wurst) you can see that the Germans, at least, consider it a sausage. I eat it on saltines or as a sandwich with Miracle Whip. I've never heard of cooking it.
