Ask questions, pick subjects he is interested in. If you still can not get him to open up find out why exactly he acts this way. And if it bothers you that much, you may just need to move on to someone who is a little bit more conversationally savvy in person.

i've been with this kind of guy too. the first 2 months he was "dead" and didn't talk much. then i tried to keep talking with him about everything and asking him what he thought about anything.
now he's the best person i can talk to. we've been together since 2,5 years.
