take them out of the Marks and Spencers box or any other good super market brand and pop them in the oven or on the plate! If you don't want to buy them try serving salmon, sour cream, chives on blinis, or the old fav cheese pineapple, and a cocktail onion on a stick! Another easy one is a parma ham and melon rolled up or on sticks. Just get things you like and pop them on sticks!!!

Cheesy Mushroom Canapés

Ingredients:

2 tablespoons butter
4 ounces mushrooms, coarsely chopped
4 teaspoons all-purpose flour
2 cups shredded cheddar cheese
1 teaspoon mustard powder
1 teaspoon Worcestershire sauce
fresh ground pepper to taste
8 slices French bread, 3/4 inch thick
2 tablespoons chopped fresh parsley
paprika
fresh parsley sprigs, optional

Preparation:

In a saucepan, melt butter. Add mushrooms and cook gently 2 minutes. Add flour and stir into mushroom mixture. Add cheese, mustard and Worcestershire sauce. Stir well and heat through gently for 2 minutes or until mixture begins to melt.

Remove from heat and season to taste with pepper.

Preheat broiler. Toast bread on one side only. Spread cheese and mushroom mixture on untoasted sides. Broil in preheated broiler for 3 to 4 minutes or until melted and bubbling.

Cut slices in half and sprinkle liberally with parsley and paprika. Garnish with parsley sprigs, if desired, and serve hot.



Chicken-Cheese Canapes

Ingredients

(6 servings)

2 c Chopped cooked chicken
3/4 c Mayonnaise
2 Scallions, minced
1/2 ts Dried basil
1/4 ts Dried thyme
1/4 ts Freshly ground pepper
1/2 c Grated Swiss cheese
1/2 c Grated Parmesan cheese
4 English muffins, split


Instructions

1. Preheat oven to 350°. In a medium size bowl, combine chicken, mayonnaise & scallions. Blend in basil, thyme & pepper. Add Swiss cheese & 2 tbsp. of the Parmesan; blend well.
2. Spread chicken mixture over English muffin 1/2's, dividing evenly. Sprinkle w/ remaining Parmesan cheese. Arange on a foil lined baking sheet & bake about 10 minutes until browned on top.
3. Cut muffins into 1/4's & serve hot.



Crab-Melt Canapes

Ingredients

(1 servings)

1/2 ea 12-oz package salad-style im
1/4 lb Jarlsberg or swiss cheese (s
1/4 ts Dry mustard
1/2 c Sliced pitted ripe olives
1 x (about 1 cup)
1/4 c Mayonnaise or whipped salad
30 ea Melba toast rounds
1 x Rosemary or wattercress spri


Instructions

Calories per serving: 50 Fat grams per serving: 3 Approx. Cook Time:
Cholesterol per serving: 6 ABOUT 30 MINUTES BEFORE SERVING OR EARLY IN DAY: Chop crabmeat. In small bowl, with fork, mix crabmeat, cheese, mayonnaise, dry mustard, and 1/4 tsp. coarsely ground black pepper. Spread 1 heaping teaspoon crabmeat mixture on each Melba toast round. Place on cookie sheets; sprinkle with 1/2 teaspoon coarsely ground black pepper. If not serving right away, cover and refrigerate. ABOUT 15 MINUTES BEFORE SERVING: Preheat broiler if manuafcturer directs. Broil canapes about 3 minutes or until cheese melts. Top each canape with a slice of ripe olive. Arrange canapes and garnish on platter; serve immediately Makes 2 1/2 dozen canapes.

eggs, water, flour, mix until you are happy! fry. they are basically thin pancakes.
