I think it had a custard to it also, and I believe it was an old German dessert dish.

Apple Coogan


Ingredients
1/2 cup sugar
2 Tbsp. shortening
1 egg replace
1/2 cup milk
1 1/2 cup flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
2 apples, peeled and sliced
Directions
Preheat to 375F. Cream sugar shortening. Add soymilk and egg replacer. To the mixture add the mixture of flour, baking powder, salt and cinnamon. Put in an 8" pie plate and cover with apple slices. Sprinkle with a little milk, sugar and cinnamon. Bake for 35-40 minutes (test with a toothpick).

I found this, not sure if this is what you're looking for

COUGAN

2 sticks butter
2 c. sugar
2 c. flour
4 eggs
Fruit filling (can be canned pie filling - I like lemon pie filling the best)

Blend butter, sugar, and 1 egg. Mix until smooth. Add 1 egg to each cup of flour (alternately). Spread half the batter on a well greased and floured pan (13 x 9 x 2 inch). Add fruit filling. Drop remaining batter on top by dollops. Bake at 325 degrees for 45 minutes.
