Yes, it probably would. Many habits are rooted in the subconscious mind, and even if the person didn't remember that they smoked, they would crave a cigarette because of the physical addiction.

It would depend on the nature of the injury. Some people wake up from comas caused by brain damage the same people they always were, but I have heard of cases where they wake up and are completely different people. I'm not sure how documented this is, but I've heard of it.
I don't know about nail biting, but smoking is more than just a bad habit, it's a chemical addiction, so whether they lost their memory or not, they'd still crave the nicotine.
