It means we chose G-d and accepted his commandments and promised to be role models/teachers to change the world through monotheism and morality.

To be "chosen" as a Jew means that the Jewish religon was chosen as the religion best suited to be the basis for Chrisianity.
Of course this was something that most Jews rejected and have since that time have suffered reapeatedly by all manner of human
prejudice. This is why they wander the ages asking "why" every time some group does a number on them. They were in effect offered a manul (the new testiment) as a guide to life and beliefs, as it would be required from that time onward..and they continued to use the old, outdated manul. The jewish religon as
outlined in the old testiment was very brutal and unforgiving and a crude instrument to use as a guide to life. This was practically impossible to follow in modern times, so they have no useful guide at all to show them a practical guide to human interaction.
If people attempted to follow the old testiment (Jewish) as a guide to behavior, they would all be in the penitentury or worse..which is what has happend to them as a culture..repeatedly..why ? why?.. why ? They ask.

I believe that Jews were chosen because they already believed in God. The Scriptures were given. Jesus came down to earth to free us from religions, and teach us to have a personal relationship with God.
They are still looking for Messiah, and they had Him right with them. I believe that God has passion for Jews and Muslims. It is now about are we following God and His will for us or are we more keen on keeping the traditions of the religion and picking and choosing things for our own benefit.
PS: I am not a scholar, this is how I feel in my heart. : )

God choose the righteous people who follow His Messengers according to His Revelations. Once upon a time Jews were chosen but not any more as they are not following God's doctrine but the doctrine of Satan and evil and all the corruption and mischief they spread in the world testify against them.

I'm not a Jew but I think that they were "chosen" because they would be the way of Christ into the world. That's why they've always been tormented. Christ was born a Jew.

well, since this question desperately needs an answer that is NOT perverted by christianity, the "chosen people" thing refers to the special biblical covenant between G-d and israel in which G-d promised to be with and love the jews, while they promised to follow his laws and be an example of monotheism in return.

I am not a Jew, but perhaps I AM Hebrew. (There is a long story in that I don't want to go into right now.)
God's 'chosen people.' Or 'Oracle' people. They were led by God, testified in the Old Testament and referred to in the New, described in the New Testament, especially in the Book of Hebrews. In order to know the planning of God concerning His 'oracle people', you must understand the Book of Hebrews. There were many types and shadows of things to come within their practices concerning the Law of Moses.
The Law of Moses was not the real way to salvation, but was to make an example of what Christ had to go through. Jesus accomplished that Law, the only one who could in all history, and provided something that men needed to have in order to be accepted into heaven by God. That is 'propitiation.'
That is; 'the offering acceptable to God.'
So the Jews, or Hebrews at a time, were to keep the festivals, the sacrifices, the rituals, in order to illustrate what God as Jesus would have to go through in order to become that perfect, unblemished, Lamb of God that was typified as the Passover lamb.
(If the lamb lived with the family for a time in their house, was unblemished, and was sacrificed and the blood struck at the posts of the door, the Angel of Death would 'pass over' that household.)
That was just one ritual now called a 'feast' or 'set time.'
There are many many prophectic illustrations in the Bible about the Messiah in the Old Testament. The trouble is, and it was also prophecied, that the people that were entrusted with all those rituals would not believe in the Messiah when He came. And:
Zechariah 13:6
If someone asks him, 'What are these wounds on your body ?' he will answer, 'The wounds I was given at the house of my friends.'
And then there was Isaiah:
Isaiah 53
1 Who hath believed our report? and to whom is the arm of the LORD revealed?
They simply would be looking for someone who came to control the Earth:
Isaiah 61
1 The Spirit of the Lord GOD is upon me; because the LORD hath anointed me to preach good tidings unto the meek; he hath sent me to bind up the brokenhearted, to proclaim liberty to the captives, and the opening of the prison to them that are bound;
2To proclaim the acceptable year of the LORD, and the day of vengeance of our God; to comfort all that mourn;
There was no chapter and verse in those days. The Jews that read the scriptures, especially out of the Septuagint, never parted verse 2. Yet God did:
"and the day of vengeance of our God;"
But Jesus did in Luke 4:
19To preach the acceptable year of the Lord.
20And he closed the book
So the Jews were confused, partially by the controlling influence of the Pharisees, and through their inability as a whole to allow God His truth. Tradition was stronger than the 'new' interpretation.
So the 'chosen' people, as a nation, were 'chosen' to bring the scriptures and the traditions of the word of God through the ages that were to pass until the coming of the Messiah, Jesus Christ.

When the Jews (as a nation) rejected Jesus as the messiah ....God rejected them.
They haven't been anything special in God's eyes for 2,000 years ....and counting.
