Salad of Vine Fruits with Ginger, Chile and Mint Syrup

Makes 6 servings

Ingredients:

Salad:

1 small cantaloupe
3 kiwi fruit
1 1/4 cups red or black seedless grapes
fresh mint sprigs for garnish

Syrup:

1/2 cup sugar
1 1/4 cups water
2 thinly pared strips lime peel
3 tablespoons fresh ginger root
1 fresh green chile pepper, seeds and veins removed
4 mint sprigs

Preparation:

Syrup:

Put the sugar and water in a small saucepan with the remaining ingredients. Stir over low heat until the sugar has dissolved, then boil for 5 to 7 minutes until syrupy. Leave to cool, then strain.

Salad:

Scoop the melon into balls with a melon-baller. Put in a serving bowl with any juice. Peel the kiwi fruit and thinly slice crosswise then cut in half. Add to the melon. Halve the grapes, add to the other fruit. Pour syrup over fruit, cover and chill. Decorate with fresh mint before serving.



Fruit Salad with Dried Cherry Vinaigrette

Makes 6 servings

Ingredients:

3 tablespoons Dried Cherry Vinegar (recipe follows)
4 tablespoons vegetable oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 cup dried cherries
1 small Granny Smith apple thin, sliced
1 small orange, peeled and cut into sections
1/4 cup whole salted cashews
1 1/2 cups Belgian endive
1 1/2 cups spinach
1 1/2 cups Boston lettuce

Preparation:

For dressing whisk together dried cherry vinegar, oil, salt and pepper. Arrange greens on serving plate, add cherries, fruits and cashews. Serve with vinaigrette dressing.

Dried Cherry Vinegar:

Combine 1 cup of dried cherries with 2 cup of white wine vinegar in a glass container. Cover and allow to steep for 2 days at room temperature. Heat just to boiling point, strain through cheesecloth. Cool and store in tightly sealed container.



Overnight Layered Fruit Salad

2 c. shredded lettuce
2 naval oranges
2 Golden Delicious apples, unpeeled and thinly sliced
2 c. seedless green grapes
1/3 c. real mayonnaise (not Miracle Whip)
1/3 c. sour cream
1 c. shredded mild Cheddar cheese

Place shredded lettuce in a 2 qt. glass serving bowl. Peel and section oranges, reserving juice. Combine apple and orange juice; toss to coat. Layer apple slices over lettuce; top with orange sections and grapes. Combine mayonnaise and sour cream, stirring well. Spread over salad, sealing to edge to bowl. Sprinkle with cheese. Cover and chill at least 8 hours.

well here is a recipe that is afriut salad but has other things in it to

1-30 oz. can fruit cocktail, drained*
1-11 oz. can mandarin oranges, drained*
1- 20 oz. can pineapple chunks, do not drain*
2 firm bananas, sliced approx. 1 in. thick, optional
1 box instant vanilla pudding *


Combine all ingredients, stirring until dry pudding moisture is fully incorporated into the fruit mixture. Salad will appear to be runny, but will thicken as the pudding absorbs the pineapple juice. Chill for at least 1/2 hour or overnight. Stir before serving.
If salad sits for longer than 4 hours before serving, I have found that it is best to add the optional sliced bananas just before serving, as they will brown slightly, however, it will only affect the appearance, not the flavor of the salad if the bananas darken.

Variations include adding other canned or fresh fruits, using another flavor of pudding mix, such as lemon, coconut, banana, etc. When my children were younger I would add marshmallows or shredded coconut, or even chopped nuts.

not much else...it is fruit salad but u can put in something nice to tie it all together like sour cream, vanilla yogurt or honey.
it's cool if u cut your fruit up in different ways to give a variety of shapes and colours to your bowl. use cubes, slices and a melon baller. look for fruits that have naturally occuring shapes like starfruit,and raspberries or if you're adventurous get some small 1" cookie cutters

All in a Fruit Salad is Fruit like: apples, pears, watermelon

chunks, catalopes, plums, strawberries, kiwi, blue berries,

oranges, tangerines, nectarines, bananas, grapes, and etc.

Well you get the point. This is a Fruit Salad and all in this salad is

basically fruit. No meat, no vegetables, just fruit. that is it.

additional items you can add to "fruit salad":
shredded coconut
orange zest
a "good" balsamic vinegar (good ones are very thick and very sweet)
good nuts to use: walnuts, cashues, pistachios
a light coating of a champagn vinegar (very sweet and bubbly, with a little bite)

FYI, add some mayo, walnuts, manderin oranges and you practially have waldorf salad.

a squeeze of lemon juice, a spoonful of brandy, and sugar to taste.

(toasted almonds are a nice last minute addition but only after you have taken the salad out of the refrigerator).

toast some nuts and some coconut and or add some seed like sunflour seed also maybe mix in some whipped cream for lightness and flavor or plain yogurt or use flavored yogurt ,, or howabout some cabbage shredded or lettuce
