Apple Fool

Ingredients

Apple Sauce
Custard
Fresh Fruit

To make the apple sauce peel, core and remove the skin from cooking apples and cook in a pan with the bottom covered in 1 inch water until soft and sauce like.

Make up the custard according to the instructions on the tin and mix with the apple before the custard can cool.

Leave to cool and set in the fridge and decorate with the fruit before serving.

I've tried this and it doesn't take long. It's really fun to do. The taste is great. It doesn't have that somewhat strange out of the box taste.

Chocolate Pudding

1/4 cup sugar
1/4 cup unsweetened cocoa powder
2 Tbsp cornstarch
Pinch of salt
2 cups whole milk
1 large egg
4 ounces semi-sweet chocolate chips

1.Whisk together the sugar, cocoa powder, cornstarch, and salt in a heavy 2-quart saucepan. Gradually whisk in the milk. Bring to a boil, whisking constantly, and boil, whisking, until pudding is thick, about 3 to 5 minutes. Remove from heat.
2. Immediately beat the egg lightly in a medium, heat-proof bowl, such as a hard plastic or ceramic mixing bowl. Very gradually add the hot chocolate mixture to the egg, whisking constantly. Whisk in the chocolate chips until they are melted and the mixture is smooth.
3. Pour the pudding into the ramekins or cups. If you want, cover the surface of each of the pudding cups with some cut out wax paper to prevent a skin from forming on the top of the pudding. Refrigerate, covered, until cold, at least 2 hours.

Simple Christmas Pudding
2 cups plain dried breadcrumbs (canister type ok)
1 cup cherry flavored craisins (dried sweetened cranberries)
1 cup orange flavored craisins
1/2 cup unsulphured molasses
1/2 cup butter, melted
1 teaspoon baking soda
1 tablespoon boiling water
1 1/2 cups apple cider
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon mace
1 teaspoon nutmeg
1 teaspoon ground cloves
1/2 teaspoon kosher salt
Heavily butter a pudding mold.
Dust lightly with flour.
In large bowl, mix together breadcrumbs, Craisins, molasses, and melted butter.
Dissolve baking soda in boiling water and add to mixture.
Add apple cider and mix well.
Sift together dry ingredients and add to mixture.
Stir to combine.
Place pudding mixture into mold.
Top mold with heavily buttered aluminum foil and cover tightly.
Bear in mind that pudding will expand some as it steams.
Place mold on rack in a steamer or large pot.
Add boiling water until the mold is 3/4 of the way submerged.
Cover and steam for 2 1/2 to 3 1/2 hours.
Pudding will be firm when done.
Serve warm with a vanilla sauce or hard sauce.

Chill.

Makes 2 1/2 cups.

Homemade Chocolate Pudding

4 cups milk
2 tablespoons butter or margarine
2 teaspoons vanilla extract
In a heavy saucepan, combine sugar, cocoa, cornstarch and salt. gradually add milk. Bring to a boil over medium heat; boil and stir for 2 minutes. Remove from the heat; stir in butter and vanilla. Spoon into individual serving dishes. Chill until serving. Yield: 6-8 servings

"Creamy Raisin Rice Pudding" - 6 servings

3 1/2 cups milk
1 cup uncooked white rice
1 (14 oz.) can sweetened condensed milk
1/3 cup raisins
1/4 tsp. vanilla extract
Whipped topping
Ground cinnamon

Combine milk and rice; bring to boil over medium-high heat. Reduce heat to medium-low; cover and cook, stirring occasionally, until mixture is creamy and liquid is almost absorbed, 25 minutes. Stir in condensed milk, raisins and vanilla; cook, stirring occasionally, until thickened, about 10 minutes. Remove from heat; let stand, covered, 10 minutes. If desired, garnish with whipped topping and cinnamon.
