Fruit Scones
Ingredients
50g margarine
100g self-raising flour
handful sultanas
soya milk
Rub the margarine into the flour to make crumbs. Stir in the sultanas and add enough milk to form a soft dough. Roll out the dough thickly and cut out with a pastry cutter. Put these onto a greased baking sheet. Brush the top of the scones with soya milk and bake into the oven until golden brown on top.
Serve with vegan margarine and strawberry jam.

Fresh Strawberry Scones
Makes 8 servings
Ingredients:
1 3/4 cup unbleached flour
2 teaspoons baking powder
4 tablespoons butter, refrigerated
1/2 cup fruit juice concentrate
1/4 cup plus 1 tablespoon milk
1 teaspoon lemon zest
2 cups sliced California strawberries
4 tablespoons strawberry jam
Preparation:
Special equipment recommended, preferably a rubber spatula or a plastic dough divider.
Stir the flour and baking powder together. Cut in the cold butter until the mixture resembles coarse crumbs.
Mix the fruit juice concentrate and milk together, stir in the lemon zest. Make a well in the center of the flour mixture, pour in the liquid and begin to mix together using the plastic dough divider or rubber spatula. The dough should come together forming a ball, yet remain fairly sticky, hence the need for the dough divider. This will make your task much simpler.
Knead the dough a few times in the bowl until it forms a workable ball, yet retaining most of its stickiness-you may need to work in an extra tablespoon or two of flour. Put the dough down to a circle about 3/4 inch thick, wrap in plastic and refrigerate for at least one hour.
Prepare a baking sheet by sprinkling it with a generous amount of flour. Cut the dough with a serrated knife down the middle, as if you were splitting an English muffin. Place the bottom half of the scone dough on the baking sheet, lay the sliced strawberries evenly and place dollops of the jam to cover the bottom half. Lay the top of the scone dough over this and slightly crimp the edges together. You may want to carefully lift the dough at this point to check that enough flour has been sprinkled beneath it to prevent if from sticking while it bakes. If not, add a little extra.
Pre-heat the oven to 400 degrees F. Cut the dough, using the dough divider or a blunt knife, into 8 equal pie-shaped wedges. Brush the top with a little milk or egg whites for a shinier appearance. Bake for 14 minutes or until browned. Serve when cooled just enough to handle, or store covered and re-heat in the toaster oven to crisp.

Ingredients
225g/8oz self raising flour
pinch of salt
55g/2oz butter
25g/1oz caster sugar
150ml/5fl oz milk
Method
1. Heat the oven to 220C/425F/Gas 7. Lightly grease a baking sheet.
2. Mix together the flour and salt and rub in the butter.
3. Stir in the sugar and then the milk to get a soft dough.
4. Turn on to a floured work surface and knead very lightly. Pat out to a round 2cm/¾in thick. Use a 5cm/2in cutter to stamp out rounds and place on a baking sheet. Lightly knead together the rest of the dough and stamp out more scones to use it all up.
5. Brush the tops of the scones with a little milk. Bake for 12-15 minutes until well risen and golden.
6. Cool on a wire rack and serve

Try this...
BUTTERMILK SCONES
2 c. flour (add 1/2 tsp. nutmeg)
2 tsp. sugar
1/2 tsp. salt
2 tsp. baking powder
1/2 tsp. soda
8 tbsp. (1 stick) butter
3/4 c. buttermilk (add 1 egg)
1/2 c. currants
CREAM SCONES:
2 c. flour
2 tsp. sugar
1 tsp. salt
1 tbsp. baking powder
1 1/2 c. heavy cream
1/2 c. currants
Combine ingredients. Knead briefly on a lightly floured board. Press into a circle and cut into wedges or roll out to 1/2" thick and cut into 1 1/2" rounds.
Bake at 400 degrees for 10 to 12 minutes until light brown.
Serve warm with butter or with jam, whipped cream, or marmalade.
May also be baked in electric skillet.

INGREDIENTS
* 2 cups all-purpose flour
* 3/4 cup white sugar
* 1 tablespoon baking powder
* salt
* 3/4 cup butter
* 1/2 cup raisins
* 1 egg
* 1/4 cup milk
DIRECTIONS
1. In a large bowl, stir together the flour, sugar, baking powder, and salt. Cut in butter by rubbing the mixture between your fingers until the mixture is fine and crumbly; stir in the raisins. In a small bowl, mix together the egg and milk; mix with dry ingredients to form a soft dough.
2. On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Dip cutter into flour, and stamp out scones. You may need to re roll the dough to get 12.
3. Heat dry non-stick griddle over medium heat. Cook each side of the scone until slightly raised and golden brown in color. Transfer to a wire rack to cool.

Cheese scones (if you don't like cheese take it out and you can add fruit, sugar or whatever you like!)
250g self-raising flour

50-75g grated cheese
150ml milk
1) Pre-heat oven to 220'c
2) Rub butter into flour until it looks like breadcrumbs.
3) Add cheese
4)Gradually add the milk until you have a dough.
5) Roll out dough on a floured work surface to 1.5cm thick.
6) Cut out scones using pastry cutters and put on greased baking tray.
7) Bake for 10-15 mins or until it has risen and is golden brown.

Ingredients:
8oz Plain Flour
2oz marg
1 teaspoon Bicarbonate of Soda
2 teaspoons of cream of tartar
1 teaspoon of sugar (optional)
Method:
Rub the marg into the flour until resembles breadcrumbs
Add the Bicarbonat of Soda and Cream of Tartar and sugar if using it.
Mix with a quantity of milk to form a soft dough.
Roll out on a floured board to about 3/4in and bake in a hot oven for about 10 minutes.
If you wish to make either fruit or cheese scones, add the mixed fruit or mature cheddar cheese to the dry ingredients.
Be successful and enjoy them.

In cooking at school i've been making scones for the last 4 weeks so i know pretty well how to make them. You need 250g of flour, 60g marg or butter, 50g of your dry ingrediants and 130ml of milk. (if you want to put fruit in like raisons add 50g sugar aswell) firstly sieve your flour into a bowl then chop your butter into small pieces then rub it in until like breadcrumbs. After add your ingrediants and then add 7 teaspoons of milk in mix with knife. if it will knead together don't add any more liquid if its all dry and won't stay together keep adding more until it does. When you have done that knead it n roll out to the size of a round bladed knife, then use a scone cutter to make them glaze with milk and put in oven on top shelf for 8 minutes.

this makes 20 scones so plenty to go around
1 lb self raising flour
pinch of salt
2 oz unsalted butter
2 oz lard
8 oz currants or sultanas
grated zest of one lemon
4 oz caster sugar
2 eggs
4 tbl spoons of milk
sift and mix the flour with the salt, then rub in the butter and lard. fold in the currants or sultanas lemon zest and sugar. make a well in the centre of the flour mix and add the eggs and milk.mix to a soft dough. these are best griddled in a frying pan for 4-5 mins over a medium heat good luck .
