Why don't they?
Because, simply stated, they are spiritually blind and refuse to see the love and mercy of the one true God, and salvation thru His Son, Jesus.
They are totally resistant to fact, figure and history.

Christians all start with enough faith to believe God at some point, that does not mean we ever understand or have all the Bible promises, but we believe God will do what He has written in the Bible, and this believing for what we yet do not have is what most people call blind faith. But they keep forgetting that a person has an assurance also.

...Probably most people who think there is little or no evidence for Christianity have never been shown or challenged by anyone. They might also just be repeating something they've heard.
...Training and reading in apologetics (meaning making a defense for Christianity, from 1 Peter 3:15) goes a long way, and then to be able to practice it helps, too. I used to be in an Evangelism Explosion group, and we got excellent instruction in evangelism, follow-up of new converts, and apologetics. We were able to visit church contacts and use what we learned, as we talked to people new to the church. I found out there are honest, good, solid answers to skeptics' questions that are available to anyone.
...For the objective seeker, there are plenty of web sites (like http://www.carm.org/) and books by authors like Josh McDowell and Lee Stroebel (i.e., Answers to Tough Questions, Evidence that Demands a Verdict, the Case for Faith, the Case for Christ) that address and answer well many different questions that are asked about the Christian faith.
...Ask God for wisdom. It is important to remember that the gospel is the power of God for salvation to everyone who believes (Romans 1:16), so one should do his best to communicate the gospel message clearly, perhaps after answering some tough questions.

I think we've been fed the "blind faith" thing since we were baby Christians, I prefer "child-like" faith myself, because like you said, "blind faith" assumes that we don't know what's happening, that we are not involved etc. Maybe we need to be telling people who say that we have "blind faith" more about our faith, so they can see that it's not blind!

HEY JC FOLLOWER- WHERE ARE YOUR COLD HARD FACTS? I'd really like to see them. How about some cold hard evidence? Anything? I didn't think so. If all the FACTS you have to go on are written into books, then you have NOTHING other than testimonials. Testimonials are not facts, and are subject to bias and opinion.
If you're faith isn't blind, then what is it? Lets hear some REAL EVIDENCE for those beliefs.

They portray our faith as blind, because they are blind, I have challenge anyone to bring the bible & we will see if who's faith lines up with God's word. The True Church was Born on the day of Pentacost.

I cannot speak for others, but true Christianity does not rely on "blind faith" but upon "assured expectation" as Hebrews 11:1 says.
Jehovah's Witnesses are careful to "Make sure of all things." - 1-Thessalonians 5:21.

After God steps in, you know it and faith is not blind anymore. Others may not know yet because they haven't suffered enough or had a life changing event take place. They will get their turn here or hereafter.

Faith is blind brother. It is the substance of things hoped for, the evidence of things not seen.
We believe because we have experienced God's saving grace.
Some will only believe their very limited human sight.

I think that there are several answers.
Some might not want to cast pearls before swine.
While others might not know how to communicate the truth.
Still others might have missed the real issue that you see.
I rely on the Spirit of God for inspiration on what to say. I try not to respond if that isn't there. That is very important to me.
