Ingredients
2 x 75 cl bottles medium to full-bodied red wine (Bulgarian Cabernet Sauvignon is ideal)
1 orange stuck with cloves
2 oranges, sliced
2 lemons, sliced
6 level tablespoons granulated sugar or honey
2 inch (5 cm) piece cinnamon stick
2 level teaspoons finely grated fresh root ginger or ground ginger
2 tablespoons fruit liqueur such as Cointreau, Grand Marnier or cherry brandy (optional)
Put all the ingredients in a saucepan with 2½ pints (1.5 litres) water then heat to simmering point, stirring until all the sugar has dissolved. Keep it barely at simmering point for at least 20 minutes – but do not boil or all the alcohol will evaporate.
This can be made in advance, then re-heated just before the party. Serve it warm in half-pint mugs (in which case there will be 12 servings) or else in 24 sturdy wine glasses.

This is my personal recipe which I use every year.
Whatever you do - do not buy bottles of ready made stuff - the wine used is so cheap and nasty.
Buy a good bottle of wine - one which you would be happy to drink normally.
Now put all the wine in a pan and turn on heat - low.
Add some grated nutmeg (about 1/2), a cinammon stick snapped in half. Now grate the zest of an orange and put to one side. Chop the orange into 3 big slices. Take the middle slice and stud with about 8 cloves, add this to the mix. Add some grated ginger - about a teaspoon. Squeeze the 2 ends of the orange to extract the juice and add this to the wine.
When you can see the wine steaming - add a good glug of brandy, and the orange zest.
Do not boil the wine, but let it get nice and warm. When ready remove the clove studded orange, as you dont want it to get too strong.
Serve in glasses, decorated with a cinammon stick, slice of orange and a little grated lemon/orange zest if you wish.

This is the recipe I use and trust me I've had to make loads of it cause of my job. The amounts you use you have to do to taste depending on how much you want and how strong. You can buy the spice bags (a bit like tea bags) from any good supermarket but if you've got the time and patience. Pierce the skin of the Oranges with Cloves and repeat this process until the orange is covered. Add three parts red wine to one part white, for the red you can just use a table wine but the white should be a hock. you will also need to add brandy, port (ruby) and a good gluck of cherry brandy is a nice touch, finally add a Cinnamon stick.

Mulled Wines - Winter's Classic Wine
One bottle of red wine (suggestions: Cabernet Sauvignon, Zinfandel, Merlot)
One peeled and sliced orange (keep peel to add zest to taste into cooking pot)
¼ cup of brandy
8-10 cloves
2/3 cup honey or sugar
3 cinnamon sticks
1 tsp fresh or 2 tsp ground ginger (allspice can be substituted)
Serves 4-6
PREPARATION:
Combine all ingredients in either a large pot or a slow cooker. Gently warm the ingredients on low to medium heat (avoid boiling), for 20-25 minutes. Stir occasionally to make sure that the honey or sugar has completely dissolved. When the wine is steaming and the ingredients have blended well it is ready to serve. Ladle into mugs (leaving seasonings behind) and enjoy!

Mulled Cranberry Brew
1 pint cranberry juice
1 cup water
3/4 cup sugar
1 cinnamon stick
6 whole cloves
1/2 lemon peel, cut into strips
3/4 quart (1 bottle) Burgundy wine
2 tablespoons lemon juice
Syrup can be made ahead. Combine cranberry juice, water, sugar, cinnamon stick. cloves and lemon peel in large saucepan. Bring to a boil. Stir until sugar is dissolved. Simmer gently 15 minutes. Strain.
Combine syrup with wine and lemon juice; heat, but DO NOT BOIL. Serve in preheated mugs with a sprinkling of nutmeg. The syrup can be made ahead, kept in the refrigerator and combined with the wine and lemon juice before serving. Serves 12

1 bottle Merlot
Store bought mulling spices
Pour 1 bottle Merlot and mulling spices into a medium heavy saucepot. Stir with a wooden spoon. Heat wine over low heat until warm and spices have infused. Ladle wine into heat-proof wine glasses.

You might be able to adapt this recipe:
250ml red grape juice
250 ml apple juice
250ml orange juice
1 teaspoon mixed spice
1 teaspoon cinnamon
1/4 teaspoon ground ginger
1 apple
1 pear
1 satsuma
Cut the fruit into small pieces and tread onto cocktail sticks. Put in saucepan with the fruit juice and spices and bring to the boil. Simmer for 5 minutes. Serve with the fruit to garnish.
