Ingredients:-
-1 Egg
-1 Cup of Milk(Vit D would be good, I use 2%)
-2 tbsp Sugar
-A few drops of Vanilla essence
(I bought a small bottle from an Indian groc. store)
Preparation:-
1) One can prepare the pudding either in the oven or in the Cooker.
2) Take a baking pan (I use a steel box which is the size of a cake) which fits into the cooker and sprinkle 5-6 teaspoons of sugar in it.
3) Hold it over a small flame until the sugar starts to caramelise.
4) Then spread the caramel evenly over the dish so that it covers the entire base of the dish.
5) Remove it and keep aside to cool.
6) Boil the milk in a pan and set aside till it cools to room temp.
7) Take a wide mixing bowl and beat the egg using an electric hand mixer until it gets foamy.
8) Then blend in the sugar and beat it once more.
9) Now add the cooled milk slowly to the mixture and blend well.
10) Add a few drops of vanilla essence to the mixture and blend again.
11) Now pour this mixture into the baking dish on the cooled caramel layer.
12) Pour 2 inches of water into the cooker and place the dish into it.
13) Steam it for a good 15 minutes on low flame with the weight on.
14) Once it is done remove the dish and set aside for cooling.
15) Then place it in the refrigerator for 2 hrs.
16) Before serving cut the entire edge of the pudding along the sides using a knife in order to loosen it.
17) Then cover the dish with an upturned plate and overturn the dish so that the pudding slides on to the plate.
18) Cut and serve.

Black Bottom Caramel Pudding
Caramel pudding
¾ cup plus 2 Tablespoons sugar
¼ cup water
1 cup heavy whipping cream
2 ½ cups milk
½ cup milk
¼ cup cornstarch
2 eggs
1 tsp. Vanilla extract
¼ tsp. Salt
Combine sugar and water in heavy bottomed saucepan. Cook without stirring, over medium heat, until mixture begins to color around the sides of the pan. Swirl pan around to evenly distribute color. When caramel turns dark amber (be careful, it will color fast, and can turn bitter quickly), add the heavy cream slowly in a steady stream with a wire whisk (stand back, the steam may burn) (add cream slow, stir fast). Place back on medium heat, and add 2 ½ cups milk.
Stirring occasionally, bring to a simmer. In a small bowl, mix ¼ cup cornstarch and ½ cup milk and whisk this mixture into caramel mixture. Stir constantly over medium heat and simmer about 2 minutes. Temper about a cup of the hot caramel mix into the eggs, then whisk mixture back into pan, cooking for 2 minutes, until thickened. Strain, cover surface with plastic, and chill completely.

Ingredients (for 8 people):
- 1 cup of sugar
- 1 quart of milk
- 3 tbsps cup of cornstarch
- 2 + tbsp of butter
Directions:
Dissolve the sugar on low heat with a little water.
When it takes a caramel color, pour the hot milk in, then the cornstarch in a very little bit of cold water.
Whip without stopping and when the cream is rather thick, add the butter and pour it into individual cups.
Served cold.

i use a very simple method :
Take a heavy bottomed pan and heat some sugar at very low heat till u get an amber colored liquid. Spread it on a wet bowl or mould in which u want to set ur pudding.
Take 500ml milk and bring it to boil. Add sugar according to ur taste and thicken the milk using anout 40 gms of custard powder. Be sure to stir it continuously to avoid lumps. Its better if u dissolve the custard powder in a separate bowl of milk before adding it to the main mixture. Put this thickened mixture in the prepared bowls or moulds and allow it to cool. U could unmould it before serving or have it as such.

Preparation
Steps:
*Take a pan, Add butter and sugar & stir till the sugar is caramelized.
* Add 200ml milk into it and keep stirring till the caramel dissolves.
* Now take a cup and add the remaining milk into it, add the corn flour and stir until dissolved. Add this to the caramel mixture and keep stirring. Once it starts thickening add sugar and Essence and stir till you achieve that custard form.
* Pour this prepared mixture into a bowl and leave it to cool for a while.
* Add a little bit of caramel syrup into it and keep it in the fridge to set, say for about 5-6 hours.
* Finally, Its time to Eat!
How to prepare caramel syrup:
Melt sugar in a pan, once you achieve that golden brown color, add a little bit of water and stir well. Caramel Syrup is ready for use
