I am really looking forward to spending a day with my daughter making cookies. Any EASY, but good, recipes would be appreciated.

With a child that young, the easiest way to bake cookies is to purchase the rolls of cookie dough from your supermarket. All you have to do is slice and bake. She could help arrange them on the pan and decorate after they are baked. My grandchildren love making cookies this way. Lots easier than from scratch, and a lot less clean-up for me!

probably short bread would be the easiest as it only requires a few ingredients and the dough is cut quite thickly so its easy for a 3 year old to handle. Actually its not so much about the cookies turning out right, its about the fun the 2 of you will have spending time messing about in the kitchen together.

I recommend using sugar cookies, they are simple and when finished you can decorate with your little one.

1 1/2 C. sugar
2/3 C shortening or butter
2 eggs
2 Tbsp milk
1 tsp vanilla extract
3 1/4 C flour
2 1/2 tsp baking powder
1/2 tsp salt

Cream shortening and sugar. Add eggs, extract and milk. In a separate bowl, mix dry ingredients with a wire whisk. Add dry ingredients to wet ingredients stepwise until well mixed using an electric mixer. Shape into a dough ball with your hands.Wrap in plastic wrap and let sit for 2-3 hours.

Preheat oven to 400F. Roll out dough (1/3 at a time) to 1/8" or 1/4" and cut with cookie cutters into interesting shapes. place about 1/2" apart on greased cookie sheet and bake for about 8 minutes. Cool on cookie racks.

Then have fun decorating with simple icing and whatever toppings you can imagine. You can also bake the toppings on by brushing cookie with an egg white wash and adding the toppings before baking.

If you want colors, mix food coloring with 1 egg yolk adn 1/4 tsp water then paint onto cookies.

What a lot of fun for you and the kids. You are gonna love this recipe: Seven Layer Magic Bars Makes about 36 1/2 cup butter or margarine 1 1/2 cups graham cracker crumbs 1 14-oz. can sweetened condensed milk 1 cup butterscotch flavored chips 1 cup semi-sweet chocolate chips 1 1/3 cups flaked coconut 1 cup chopped pecans Preheat oven to 350°, (325° for glass dish). Line a 13x9-inch baking pan with a sheet of foil, making sure to cover the sites well. Place the butter in the baking pan and melt it in the oven. Sprinkle crumbs over butter; pour condensed milk evenly on top of crumbs. Top with remaining ingredients in order listed; press down firmly with fork. Bake 25 minutes or until lightly browned. Cool. Chill if desired. Cut into bars. Store covered at room temperature. (these can be frozen if you do not want the kids to eat all of them)

OLGA's SUGAR COOKIES:
1/2 cup butter (softened)
1/2 cup shortening
1 cup sugar
3 eggs
1 1/2 teaspoons vanilla extract
3 1/2 cups flour
1 teaspoon baking soda
2 teaspoons cream of tartar
In a large bowl, cream butter, shortening and sugar. Add eggs and vanilla extract until light and fluffy. Sift dry ingredients together and add to butter mixture until well blended. Chill dough for 1 to 2 hours. On a lightly floured surface, roll dough to 1/8-inch thickness. Cut with cookie cutters. Place on greased baking sheets or parchment paper. Sprinkle with colored sugar or leave plain to frost later. Bake at 350 degrees for 5 to10 minutes or until lightly browned. Cool on wire racks.

use any basic sugar cookie recipe, roll them into small balls, an dlet her smash them and decorate. Great fun and easy for her.You can make the dough the night before so the two of you just get to do the good stuff.

this is really delicious...

easy shortbread:

6 ounces of flour
4 ounces of butter
3 ounces of sugar
oven pre-heated to 300

1. soften the butter just a bit, then chop it up

2. rub the butter into the flour, so that you have little crumbs

3. grease/flour a baking pan

4. press the mixture hard into the bottom of the baking pan with your hands, the harder the better!

5. bake for half an hour

6. cut the shortbread into shapes, and decorate, or sprinkle with sugar.. but you can only take the shapes out once it's cool! otherwise it will be destroyed

I would go for the rolls of cookie dough with the figure inside. This time of year, they have Xmas trees & Snowmen. That way, you slice and she puts them on the sheet. You can also use the plain cookie dough roll, you cut them, she places them and then you brush some beaten egg whites on them and she can sprinkle the 'pretties' on them. They also have precut shapes now -- like gingerbread men, etc.
