I eat out all the time and I want to stop it. I am looking for a good, light tuna and chicken salad recipe. I'll take any ideas for good lunch recipes too!

San Antonio Chicken Salad

Makes 4 servings

Ingredients:

2 large whole chicken breasts, split, boned and skinned
1/2 cup salsa
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 cup sour cream
2 tablespoons mayonnaise
1 ripe avocado
1 cup sliced celery
Bibb or leaf lettuce leaves
4 crisply cooked bacon slices, crumbled

Preparation:

Cut chicken into 1/2 inch cubes. Combine salsa, cumin and salt in 10-inch skillet. Cook chicken in salsa mixture, stirring frequently, until cooked through, about 4 minutes. Transfer contents of skillet to mixing bowl; cover and chill thoroughly.

To serve, combine chicken mixture, sour cream and mayonnaise. Mix well. Peel, seed and coarsely chop avocado. Add avocado and celery to chicken mixture. Mix lightly. Spoon onto lettuce-lined salad plates; sprinkle with bacon. Serve with additional salsa on the side.

My favorite sandwich recipe is for Chicken Curry Salad. Don't let the curry put you off! I used canned chicken or left over chicken breast, red grapes halved, mayo, mustard and curry powder (I like the Morton & Bassett brand, you'll find it at the supermarket in the spice section.) If you wanted to health it up even more, you can use plain yogurt instead of or with the mayonaise. I have also tried bits of apples, grated carrots and celery on place of the grapes, but I really prefer the sweetness of the grapes with the tangy chicken. I never measure, just tweak to your taste. I have also had it on top of a spring mix salad instead of bread. Very yummy and healthy!

A trick I learned in London was mixing canned sweetcorn into my tuna salad. It's how they do tuna salad in England, and it's yummy! The corn adds moisture, so you don't need as much mayo.

Chicken Salad:
1 can of Chicken(near tuna)
3/4 can of crushed pinapple
Handful of Red Grapes
1/2 cup of Sliced Almonds
1 Teas of Horseradish
Mayo to Taste
Drain the chicken and pinapple well, then stir everything together. Place on roll, bread, or bagel for a delicious sandwich.
Also I love a bagel sandwich, it's quick and easy.
Smear favorite cream cheese on bagle(my fav is honey wheat by Sara Lee), place one tomato, lunch meat, and alpha alpha sprouts. Yummy!!!!!

This isn't a tuna or chicken recipe, but I imagine you could add chicken and it might be good!...I take cream cheese (light or regular) and mix the hidden valley ranch mix.....the new spicey one....mexican flavor.......add some finely chopped ham and green onion if you like....and spread it over a flour tortilla, then layer another tortilla and more mixture. Roll it up tightly and slice it about a half an inch.....it's snack size, but filling too!...Hope you enjoy it!

Chicken Salad

1 can chunk chicken, drained
1/4 cup chopped pecans
1 medium apple, diced
Mayonnaise to taste
Lettuce leaves

Mix chicken, nuts, apple and mayonnaise together. Place on lettuce. You can use leftover grilled chicken as well instead of the canned chicken.
