Easy Rigatoni for beginners

1 bag noodles.....shells work pretty well
1/2 lb monterey jack cheese, shredded
2 cans tomato sauce
little bit of butter
Cook noodles according to directions. While cooking noodles, in a separate saucepan, throw in a little butter and the tomato sauce. Once that is hot, add the cheese til it melts. Once the noodles are done, and the cheese has melted, add tomato/cheese sauce to noodles and stir. Salt and pepper to taste. You can adjust the amounts as needed, more or less cheese, and sauce depending on how you like it.

Easy rigatoni bake

Yield: 6 servings
3 cup Rigatoni,
8 ounce Cheese, sharp cheddar or swiss
2 cups Spaghetti sauce
2 tablespoon Cheese, parmesan; grated

Cook rigatoni in rapidly boiling water 12-15 minutes, or until barely tender. Drain. Cut cheese into strips 1 1/4" long and 1/4" thick. Insert a piece of cheese in each rigatoni. Place in a shallow greased six-cup baking dish. Pour sauce over; sprinkle with cheese. Bake, uncovered, at 350F for 30 minutes or until cheese is melted and sauce is bubbling hot

Baked Rigatoni

1 tablespoon olive oil
4 cloves garlic, thinly sliced
1 28-ounce can whole or diced tomatoes, undrained
1/4 teaspoon red pepper flakes
1 1/2 teaspoons dried oregano
1 teaspoon kosher salt
1 teaspoon sugar
16 ounces rigatoni
1 cup heavy cream
3/4 cup (3 ounces) grated Parmesan

Heat oven to 400° F.

Heat the oil in a large saucepan over medium heat. Add the garlic and cook until golden but not browned, about 1 minute. Add the tomatoes and their juices, red pepper, oregano, salt, and sugar. Bring to a boil. Reduce heat to medium-low and simmer (crushing the tomatoes with the back of a wooden spoon if using whole tomatoes) until the sauce thickens slightly, about 20 minutes. Stir in the cream and 1/2 cup of the Parmesan.

Meanwhile, cook the rigatoni according to the package directions. Add the drained rigatoni to the sauce and toss to coat. Transfer to a 2-quart casserole and top with the remaining grated Parmesan. Bake for 20 minutes. Let rest for 10 minutes before serving.

Yield: Makes 4 servings

Rigatoni is a heavy pasta, and can hold up to a meat sauce. I make mine from scratch most of the time, but when I'm in a hurry (or when my husband is cooking it) we make it like this:

1 lb box rigatoni
1 lb ground beef (or chicken or turkey)
1 diced green pepper
1 diced onion
2 cloves diced garlic
2 tablespoons oil
1 jar red spaghetti sauce
1 small jar alfredo sauce


In a large saucepan, heat oil. Sautee all vegetables until tender. Add hamburger and cook until no pink remains. Drain off grease. Add both sauces. While this is heating, cook rigatoni according to box directions. Drain. Mix sauce and pasta. Serve with garlic bread and salad.

If you want, you can make this even easier by eliminating the veggies and using a chunky pasta sauce. My family loves this recipe. Good luck!

Baked Rigatoni
2 tablespoons vegetable oil

1 small green pepper, diced
1 can (28 ounces) whole tomatoes, cut up
1 can (8 ounces) tomato sauce
1 can (6 ounces) tomato paste
3/4 cup water
1 jar (4-1/2 ounces) sliced mushrooms, undrained
3 garlic cloves, minced
1 bay leaf
2 teaspoons sugar
1 teaspoon oregano
1-1/2 teaspoons salt
1/4 teaspoon pepper
1/4 cup chopped fresh parsley
1 pound rigatoni
2 tablespoons butter
2 eggs, beaten
1 carton (15 ounces) ricotta cheese
1/2 cup grated Parmesan cheese
Additional Parmesan cheese
In a large skillet, heat oil over medium-high. Cook onion and green pepper until tender. Add tomatoes, sauce, paste, water, mushrooms, herbs and seasonings. Simmer, uncovered, for 30 minutes. Remove bay leaf. Cook rigatoni according to package directions; drain and toss with butter. Mix eggs, ricotta and Parmesan cheese. Stir into rigatoni mixture and spoon into 13-in. x 9-in. x 2-in. baking dish. Top with tomato mixture; bake at 350° for 30-40 minutes or until heated through. Sprinkle with additional Parmesan cheese. Yield: 8-10 servings.

Baked Rigatoni & Meatballs
Yield: 4 Servings

Ingredients

2 tb olive oil
1 onion, chopped
2 garlic cloves, minced
3 c mushrooms, sliced
1 sweet green pepper, chopped
1 1/2 ts dried basil
1 1/2 ts granulated sugar
1 ts dried oregano
1 ts salt
3/4 ts pepper
28 oz canned tomatoes, chopped
2 tb tomato paste
3 1/2 c rigatoni pasta
1 1/3 c mozzarella, shredded
1/4 c parmesan, freshly grated

--------------------------------MEATBALLS---------------------------------
1 egg
1/3 c onion, finely chopped
1/4 c dry bread crumbs
2 garlic cloves, minced
3 tb parmesan, freshly grated
1 ts dried oregano
3/4 ts salt
1/2 ts pepper
1 lb lean ground turkey chicken
-or beef; may be used

Instructions

Meatballs: In bowl, beat egg lightly; mix in onion, crumbs, garlic,
Parmesan, oregano, salt and pepper. Mix in turkey. Shape heaping
tablespoonfuls into balls.

In large skillet, heat oil over medium-high heat; cook meatballs, in
batches if necessary, for 8-10 minutes or until browned on all sides.
Transfer to paper towel-lined plate.

Add onion, garlic, mushrooms, green pepper, basil, sugar, oregano,
salt, pepper and 2 tb water to skillet; cook over medium heat,
stirring occasionally, for about 10 minutes or until vegetables are
softened. Stir in tomatoes and tomato paste; bring to boil. Add
meatballs; reduce heat and simmer for 30 minutes or until slightly
thickened.

Meanwhile, in large pot of boiling salted water, cook rigatoni for
about 8 minutes or until pasta is tender but firm. Drain and return
to pot; add tomato sauce, stirring to coat rigatoni.

Transfer to 11x7-inch baking dish or 8-cup shallow oven casserole.
Sprinkle mozzarella (use part-skim mozzarella), then Parmesan evenly
over top.

Bake in 400F 200C oven for about 20 minutes or until cheese is melted
and top is golden.

Cook it and pour some pasta sauce over it...serve with Garlic bread and/or salad.

Cook noodles, pour sauce over it...top with mozzeralla cheese and bake until cheese is melted.
