Many recipes that call for wine-Can you use Champagne red or white instead? No one ever says. Second does Champagne HAVE to be refrigerated after opening? Most alcohol (wine,liquor)does not ,but what about Champagne? Can you get food poisening from Champagne that has been left out several days when the weather is warm?

If all you have is Champagne or another sparkling white wine, yes, you can cook with it. It's a dry white wine for the purposes of cooking. You can't really reseal it because it will become less fizzy after the first opening. The flat wine is only good for cooking then.

You can use it in place for a dry white wine in cooking but it is much better to drink. As for saving it you should never re cork champagne, first it is bad luck ,second it goes flat very fast ,if you want to save it for cooking let it go flat then re cork it so that the pressure inside does not pop the cork inside your fridge.
wine left out for while will turn into vinegar.

You can. If you are going to cook with champagne, drink anything that's left immediately or else the bubbles go bye-bye. Afterall, the whole point of champagne is wonderful fuzzy bubble wine.

Most people don't cook with champagne because 1) the fizz goes flat and 2) it's generally expensive. If it's been sitting out for any length of time, it will likewise be flat, and flat champagne is just NASTY :-P

champagne is wonderful as an a base for risotto especially when married with smoked scamorza cheese .

also it can be used for sorbets or ices .

leave in the fridge , but better drink it up .
