Several. Check out Robert Price's pre-nicean new testament if you like.

For the most part christians view the OT as a necessary precursor to the new. What is and isn't cannonical was decided by tradition to some extent, and also my the councils at Nicea and Trent, for example. Each sect of Christianity has it's own ideas regarding what is cannonical and what isn't. There is no reason they couldn't ditch the OT if they felt like it, but once you believe something is cannon it's hard to be convinced otherwise.

Also, removing the OT would remove a lot of differences, but keep in mind the NT is full of contridiction with itself as well. It's not like removing the OT would solve the problem anyway.

Yes, they sell only New Testaments. We don't because the new and old testaments go together. As one pastor put it, "The New Testament is in the Old Testament contained, and the Old Testament is in the New Testament explained". Many things in the Old Testament give a clearer image of what is meant by the New Testament.

Because the OT puts everything in the NT into context, including many of the teachings, fulfillment of prophecies, declarations by Jesus, and the whole concept and mission of the Messiah Himself.

As you are aware, I am an Atheist. I own the Jeffersonian Bible, or as Jefferson called it, The Life and Morals of Jesus of Nazareth. It is a compilation of the NT with all of the miracles and mysticism removed. It ends with Jesus being sealed in the tomb. Any and all contradictory information was also expunged. My reading of that book led me to think that Jesus was probably an alright guy.
