I always have a big christmas brunch after opening presents...we bake a ham a i cooked a egg cassarole and im looking for a good one this year...it has cheese and eggs and what every else you want to put in it....but you layer it with toast and cheese...any Ideas?

The Night Before Christmas Brunch Bake

This is my variation of breakfast casserole. Can you have too many? My family loves this recipe because it includes potatoes, while I pretend that it makes it lower in calories without bread cubes and eat lots more toast!"This recipe is great to prepare on Christmas Eve and bake on the morning of Christmas Day."

1¾ hours 10 min prep

INGREDIENTS

8 frozen hash brown patties
2 cups cubed ham or crumbed bacon or browned sausage
2 cups shredded cheese, divided
2 cups milk
1 (10 3/4 ounce) can cream of mushroom soup, undiluted
4 eggs
1 teaspoon ground mustard
1/4 teaspoon pepper

DIRECTIONS

Place potato patties in a 9 x 13 inch baking pan coated with nonstick cooking spray.
Top with ham, bacon, sausage or any combination, and sprinkle with 1 1/2 cups of shredded cheese.
Combine milk, soup, eggs, mustard and pepper; pour over cheese.
Cover and refrigerate overnight.
Remove from refrigerator 30 minutes before baking.
Bake covered at 350 degrees for 1 hour.
Uncover and sprinkle with remaining 1/2 cup shredded cheese.
Bake 20-25 minutes longer or until a knife inserted near the center comes out clean.
Let stand 10 minutes before serving.

Try Tahoe Brunch:
(make up the night before, refrigerate overnight)
layer in greased Glass pan
pieces of day-old french or sourdough bread
1 lb. sweet Italian sausage, browned and crumbled (loose)
1 onion, diced and sauteed
4 thinly sliced Roma tomatoes
1/2 lb grated Monterrey Jack cheese
6 eggs, beaten with a little milk and a dusting of nutmeg
In the morning, heat the oven to 350F
Bake for about one hour, will be done when a knife comes out clean. Allow to cool for 10 to 15 minutes, then slice into squares and serve with fresh fruit, toast, jam, juice, coffee and or cocoa for a complete breakfast!
