Get your butcher to make you up a crown roast of lamb. It's basically as many lamb chops as you want, but all joined together in a circle.

The butcher will put little white paper chef's hats at the top of each chop if you ask.

It looks really impressive, and is delicious, but very easy to cook. Just the usual 20 minutes per pound plus an extra 20 minutes at gas mark 5 (centre of oven).

A simple roasted chicken would be perfect.

1/4 cup olive oil

1 envelope GOOD SEASONS Italian or Garlic & Herb Salad Dressing & Recipe Mix

1 large roasting chicken (6 lb.)


PREHEAT oven to 350°F. Mix oil and salad dressing mix; brush under skin and on outside surface of chicken.

PLACE chicken on rack in roasting pan.

BAKE 1-1/2 to 1-3/4 hours or until chicken is cooked through (180°F when tested in the thickest part), brushing occasionally with the salad dressing mixture.

Have whatever meat you like - we're having lamb for Christmas, and venison for New Year's Eve. Something that you can roast is usually a good idea, as it's simply a case of bunging it in the oven, and spending time with family whilst it cooks. I can't blame you for steering clear of the turkey!

I don't blame you a bit for not liking turkey. It used to be my favorite, but anymore they give the birds some many growth things that it kills the flavor. Mayby a naturally gown one would be good. I think a good ham would be good. One of the good ones that have been naturally cured. There is a place in California, Missouri that sells them and they are really good. They also ship them. A whole one will cost you over fifty dollars though. There are only two of us at home anymore so I buy the boneless pork loins and cure them myself with salt and brown sugar, then I smoke them with hickory and apple wood. They turn out real good. I have also injected them with Jack Daniels, however you make them at home they turn out good.

"Ham with Cherry Sauce" - 8 to 10 servings

1 fully cooked bone-in ham (6 to 8 lbs.)
1 cup packed brown sugar
3 tbsp. maple syrup
1 tsp. ground mustard
1/2 cup sugar
3 tbsp. cornstarch
1 cup cold water
1 (16 oz.) can pitted dark sweet cherries; undrained
2 tbsp. lemon juice
1 tsp. almond extract

Place ham in a roasting pan. Score surface of ham with shallow diagonal cuts, making diamond shapes. Combine brown sugar, syrup and mustard; rub over ham and press into cuts. Cover and bake at 325* for 1 3/4 to 2 hours or until a meat thermometer reads 140* and ham is heated through.
For cherry sauce, in a saucepan, combine sugar, cornstarch and water until smooth; add cherries. Bring to boil; cook and stir for 2 minutes or until thickened. Remove from heat; stir in lemon juice and extract. Serve with ham.

I like baked ham. I season it with pineapple juice and cherry juice by injecting a mixture of the two in different places on the ham. Then I put slices of pineapple on the ham and cherries on it using tooth picks to keep them in place. The ham comes out of the oven nice and juicy and has a wonderful taste.

How about a roast duck?? quick easy and delicious, just oven cook the way you would roast a chicken make sure you baste it through so the skin becomes nice and crispy.
serve with some plum sauce mmmmmmmmm tasty

My husband and I are not fans of Turkey either. Our tradition for the last 3 years is to have duck. We render the fat then cook it in a red wine and green olive sauce. Super yum.

I like a big prime rib roast with yorkshire pudding. Goose is great but turns out very small. I might do one this year in addition to the roast.
