Why do the Poles and Russians? or all the others?
For that matter, statistics show that a) the Irish are the biggest tea drinkers on earth, and b) the brits drink more than them... so maybe a study of england should come first?

My mate's Irish, and doesn't drink at all. She doesn't like the taste.
But to answer the Q... Irish people get thirsty like anyone else does. If they did not imbibe sufficient fluid they would get ill and die. Hope this helps you out.

It's in our tradition... coupled with the fact we have our very own fine blends such as Guinness & many whiskeys. The English drove us to drink many moons ago anyway! Both in sorrow & victory!
