There are actually a few ways I learnt in catering college.

You can put the slices in lemon juice as many people have suggested, but it will give the apple a more bitter taste because it's porus. A better way of stopping it going brown is orange juice.

Alternatively, if you're going to eat them quite quickly, just put a tiny little bit of water in a saucer, just enough to cover the slices, and leave them there. It slows down the oxidization, but not as well as citrus because they actually stop it happening.

There is this product called "Fruit Fresh" found at grocery stores and supermarkets. (In my local Wal-Mart it's in the jello/pudding isle) You sprinkle a little bit on the fruit and it helps to keep it from browning. (Personally I don't taste any difference with the Fruit Fresh on the fruit... but that may differ from person to person)

Also, if I don't have Fruit Fresh, I'll cut the apples and place the cut slices in a bowl of lemon water. If you dilute the lemon juice enough you don't taste it.
