I presume you want a thick dark coffee with rich flavour in which case you should only use 100% arabica beens which have been freshly fully roasted (good beans should be oily after roasting)and are freshly ground, preferably just before extraction. Over packing the stove top moka or running the water through twice will only make the coffee bitter.

Pack the filter to the top. I have been lightly packing each layer as i go. then i mound some on the top and make about a 1/4 inch dome with my finger. Make sure the edges are clean before screwing the top on. Dont pack the layers too tight as the pressure has to go somewhere. If your coffee is ground too fine i find i get a bitter flavor. If this happens use a courser grin.

Try running the coffee through twice, you should clean the filter after the first run though.
