The zest is the outside yellow part of the skin.
the white portion is called the pith and it is bitter. The zest has a clear lemon taste.

Zest is referring to the peel of the lemon and is used in cooking. Sometimes it is referring to just the part in between the peel and the fruity part of the lemon.

the zest is the outer yellow layer of the lemon skin,the surface with the fine pores,going deeper you get to the bitter white part known as the pith,being bitter it is not used in cooking,finely grated zest is used in cooking & baking to give its distinctive lemony flavour,this part has abundant essentail oils that impart the flavour when added to a dish.

It is the outer YELLOW part of the peel. Not the WHITE under part of the peel. Always be careful to grate off just the yellow zest.
