THIS CAN BE DONE THE DAY BEFORE - SO MORE TIME TO SPEND WITH HUBBY AND BABY ON CHRISTMAS MORNING - WITHOUT HAVING TO MISS A THING.
STRESS FREE CHRISTMAS!!!!
One of my favourite dishes - cheap and tasty.
4-6 Chicken Thighs (boned and skinned)
4 Sausages(spicy is great with this dish)
Cured Ham(Proscuitto type)
Lay a length of Clingfilm out on the work board.
Then Lay around 6 slices of ham(overlaping as you go) over the top of the cling film.
Place your chicken thighs on top of the ham (try not to have any gaps in the chicken.
Taken sausage out of the skin and press along the middle lenght of the chicken.
Season with whatever herbs etc you like.
Now roll the clingfilm over til it forms a log(roll it tight - it may roll over more than once.
Keep the clingfilm on and tighten so it looks like a christmas cracker. Make sure it is sealed tight at the end. Now roll in tinfoil the same way -tight allover and the ends.
Place in a large pan of boiling water for approx 30/40 minutes.
Remove and allow to cool - Place in fridge for Christmas day.
Prepare Potatoes and veg and leave them in a bowl of cold water
On Christmas day - about 1 hours before you want to eat - remove the Chicken Roll from the fridge. Unroll the foil/clingfilm etc. You should be looking at a stripy roll of chicken wrapped in bacon. Now add a little oil to a pan on a medium heat(as the dish is already cooked) Add the roll- if its too big then half it. Brown the bacon all over and ensure the centre is hot before removing from heat. When ready remove from heat and slice into medallions and lay on the plate beside you roast/mash potatoes and veg, pour over gravy and Bon appetite.
I have made this many many time and it never fails to impress.
Fav pud - Apple Pie and ice cream or pouring cream.
I know this sounds like a lot of prep - but really only takes about 15minutes.
Hope you at least try this, if not from christmas - then another time.

If you want a traditional Christmas, you could get a turkey crown (just the breast meat), with all the vegetables and trimmings. A roast is a very simple dish to prep. and cook - you just have to make sure that the timings are spot on for serving.
Personally, I would still buy a large joint, as it will then last for several days afterwards, and you can make all sorts of meals. It will work out to be a cheap Christmas if you spread out the meals this way.
If you don't like turkey, try something else - we're having lamb (making a guard of honour). For New Year's Eve, we're having venision - a haunch, studded with juniper berries, and basted in gin. Venison is a highly under-rated meat, and is very low in fat. You also don't tend to eat very much of it, so a single joint will last for ages.

You could do something simple but a bit different. If you have a Liddl supermarket near you, they have smaller portions of things like goose in their freezer section at very reasonable prices. Roasts are easy and any left overs can be made into a casserole later so there is no waste. So you can opt for roast beef or honey-roast ham.
I am alone with hubby this year. I will do smoked salmon roulade (a little Roule cheese ) starter. Individual roasted quails stuffed with raisins with petits pois and baby carrots (those come in small tins ready mixed) and small potatoes that I boil for 10 minutes then roast with the quails. I have made a small Christmas pud, because my husband likes it , but you can also buy them ready made very cheaply. You can mix plain soft vanilla ice cream with your own dried fruit folded in to make Cassata, refreeze and serve when you want to.
Boxing day will see cheese souffle (easy), small honey-roast ham with parsnips and Brussels sprouts, apple crumble with single cream.
The evening meals will be a salad with bits and bats like hard boiled egg, bacon bits and grapes added in to make it interesting. With a small baby you want as much rest as you can, so don't go for complicated things.

Charmaine why don't you purchase a few chicken breasts, spray then with oil and season with sage, thyme and garlic powder, bake them at 350deg for approx 20-25 minutes, don't over cook the chicken.You can always buy a ready cooked chicken add the larger grocery stores. Buy some stove top country stuffing and follow the directions. Make some boiled carrots strain the hot water after they're cooked and add whole butter a tbsp of sugar and a pinch of salt & pepper. Buy your favorite pie and heat it in the oven and add a scoop of ice cream. I hope this is of some use.

I would go for small stuffed roasted chicken + small cake like judy-8r proposed, add a mixed green salat.
As starter I would serve a herbs-cream-soup: boil in water some ruccola or fresh basil or parsley (not chopped!) or mixture of and cook for 5 mintues. Take greens out and mash in food processor.
Add them a gain to the boiled water, add 1-2 broth cubes and cook until dissolved. Turn heat into small, and add cold pieces of butter - it helps "bind" the soup. At the end, add some whipped cold cream and boil untel very low heat for 3 min. Serve with Puff pastry-stars = roll puff pastry,cut out small stars with a metal form, springle with some grated cheese if you like and bake until up and golden brown.
Light a couple of candles and serve a nice wine.

why not have a roast chicken with stuffing, potatoes, and veggies, and buy a pie or small cake for dessert? it really doesn't take very long to make stuffing, or you could even buy the stove top kind in the box ready to add water to and stuff the chicken, peel potatoes and carrots and turnips, and you are done, cook the chicken for about 2 hours, the veggies for about20 minutes, mash the spuds make gravy if you choose. and eat,

2 cups of wheat flour, two eggs, 1 tea spoon baking powder, 2 table spoons of cooking fat, 11/2 cup of milk to mix the flour and a pinch of salt. Mix the stuff until smooth for baking pan cakes. + a soft drink of you taske, a fresh fruit like pieneaple or passion fruit and you will enjoy your xmas

book into a nice local restraunt for xmas day, it will be cheaper than buying loads of ingredients, and you wont have to do the washing up. i love going for an indian at xmas, cheep, fabulous and different!
