I've been looking to reduce simple sugars from my diet. In an effort to do this, I've been using splenda, nutrisweet, tried diet drinks with aspartame as well as tried some natural sweeter that is something like 100 times sweeter then sugar.
In all cases, these substitutes have caused me headaches and I'm also concerned about not using non natural substances.
Is there anyone that's been in the same boat and found something that really works well for them?

Well so far your common answer is Splenda, but I am going to have to go against that one. Sure they ditched the aspartame, but it still have many similar ingredients that are harmful chemicals.
I'm not sure your reason for avoiding the sugars, but there are other ways to avoid the monosaccharide or disaccharide "simple sugars" (so on and soforth... whatever) such as avoiding the carbs, fruit sugars, etc. But a lot of what you eat is broken down into simple sugars, and there is not much you can do to avoid it.
Personally, when I use sugar, I use a brand called "Sugar in the Raw". It's unprocessed sugar and the name says it all.
There's a boook called "Natural Cures That "they" Don't Want You To Know About" by Kevin Trudeau. It is extremely helpful when making food choices, and it is easy reading. Big eye opener too. It also has a list towards the back of the book containing diseases, their causes, and natural cures. It also has information about the headaches too, but I don't think that is really what your problem is, is it?
The headaches could very well be caused by a withdrawal of a certain area of your diet, maybe avoiding the processed sugars or foods. Some CEOs of some anonymous food industries have admitted to adding ingredients that cause addictions, even in the slightest amount, in almost every food (slight exaggeration on the "every food" part), so when you stop eating it you develop undesirable symptoms.

I use this all natural protein supplement from an organic health food store. The sweeteners they put in there are carrageenan and stevia. Both of these are natural sweeteners derived from plants.
Many users suggesting splenda, but that already causes you headaches.
Honey is simply fructose, glucose and some sucrose and maltose so it isn't exactly a substitute for sugar.

Splenda, since it is made from sugar it is not entirely a chemical like aspartame etc. IMHO it tastes the best. Frankly, all of the other artificial sweetners cause me awful troubles with my IBS, but not Splenda.

If you don't want to use honey, there is a honey like substance called aguave or something like that, and I think it is made from a cactus. It taste just like honey. You can find it in health food stores and all natural grocery stores. When I bought mine it was next to the honey. It is good.

I use Splenda...it is made from sugar and yes, it really tastes like sugar. It does seem to taste about as sweet as sugar.

I prefer Splenda because it won't kill you, hopefully.
Plus, it tastes like sugar because it's made from sugar. =]
