i'm looking for a great receipe for m/loaf, my mum made it when i was i kid and i loved it she, is'nt here to ask her the receipe, needs to be child friendly as i have children that will be eating it, no hot spice's !

Low Carb Beefed-Up Meatloaf

Prep Time: 30 minutes
Cook Time: 1 hour 15 minutes

Tomato Topping:
1 (8-ounce) can tomato sauce
1 (6-ounce) can tomato paste
1/4 cup sugar substitute (recommended: Splenda)
2 teaspoons white vinegar or water

2 pounds ground chuck or meat loaf mix with ground pork
2 eggs
1/2 cup grated Parmesan
1/4 cup red onion, diced small
1/4 cup roasted or fresh red bell peppers, diced
2 tablespoons chopped fresh parsley leaves
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 pound prosciutto, or any type of ham, thinly sliced
1/4 pound provolone cheese, sliced

Preheat oven to 350 degrees F.

In a small bowl, mix together the tomato topping ingredients. Set aside. Add a few drops of water to thin to a ketchup consistency.

In a large bowl, mix together the beef, eggs, Parmesan, vegetables, herbs, and seasonings.

Working on a waxed paper lined sheet pan or counter, form meatloaf mix into a 10 by 8-inch flat rectangle on the waxed paper. Place a layer of prosciutto slices on top, followed by a layer of provolone slices. Roll up the stuffed meatloaf mix like a burrito and seal the edges all around by pinching the meat.

Place the roll, seam side down, into a 5 by 9-inch loaf pan. Spread a heavy coat of the tomato topping to completely cover the top of the meatloaf. Place in oven and bake for about 1 hour and 15 minutes, or until the temperature on a meat thermometer registers 165 degrees F. Drain fat and let rest at least 10 minutes before slicing.

I just got through making one! The ingredients are:
1 pound of lean hamburger meat, 1/2 cup chopped onion, 1/2 cup chopped bell pepper, salt, black pepper, tomato sauce (16 oz. can), one egg, three slices of bread, and 2 TSP. ketchup.
In a large bowl, break up the thawed hamburger meat. Salt (1 teaspoon) and black pepper the meat. Mix together. Break the egg in a cup and beat it together, then pour into the meat and mix together. Add the onions, bell pepper, and tomato sauce, and mix thoroughly to make a uniform mixture. Take the three slices of bread and break into small pieces and mix into the meat mixture - mix everytrhing thoroughly. Place the mixture into a pan (I use a covered Corningware dish, but you could use a pie or cake pan equivalent to a 10" x 10" size). I prefer glass cookware to metal (it tempers the effect of edge burning). Smooth the meat mixture in the pan. Place the 2 TSP of ketchup on top of the meat and spread evenly. Preheat the oven to 350 degrees and place the pan (with cover) into the oven for 1 1/2 hours. After the time is up, pull the pan out, remove the cover, and cook for an additional 20 minutes at 350. This will end up juicy and tender and delicious.

ALthough meatloaf can be made many ways here is one that I have loved since I was a kid:

1lb ground round
1 package of lipton onion soup mix
1/4c onion diced
couple celery stocks diced
1-2 garlics
1/4-1/2 c plain oatmeal ( depending how much to keep it together)
1 egg
ketchup to taste
mustard to taste
salt and pepper to taste
make a design with ketchup on top ( my favorite thing to do when I was a kid)

dump all into one bowl mix with hands then mold into a loaf pan cook 375 (degree differ in different living climates) for 1 hr.

serve with some mashed potatoes the tastiest thing ever!

This is from the Ann Landers recipe for meatloaf. 2 lbs of ground round/hamburger, 2 eggs, 1 & 1/2 cups of bread crumbs, 3/4 cup of ketchup, 1 tsp of Accent, 1/2 cup of warm water, 1 pkg of Liptons Onion Soup Mix. Mix all ingredients thoughly together. Put into loaf pan. Cover with two strips of bacon (optional). Pour one 8 ounce can of tomatosauce over the top. Bake one hour at 350 degrees. Serves six. I have used this recipe many times and it's good.

Souper Meatloaf
Combine 1 can Campbell’s Tomato Soup, 1/2 cup cornflake crumbs, 2 lb. ground beef, 1/2 cup chopped onion, 2 TBSP salt, dash pepper; mix thoroughly. Shape firmly into loaf; place in shallow baking pan. (Thorough mixing and firm shaping will result in a moist, easy-to-slice loaf.) Bake at 350 degrees for about 1 1/4 hour. For sauce, combine 1/4 cup drippings with additional can of Tomato Soup; heat and server over loaf. 8 servings.

Dad's Meatloaf with Tomato Relish Recipe courtesy Tyler Florence

Tomato Relish:
Extra-virgin olive oil
1 onion, finely diced
2 garlic cloves, minced
2 bay leaves
2 red bell peppers, cored, seeded, and finely diced
2 tomatoes, halved, seeded, and finely diced
1/4 cup chopped fresh flat-leaf parsley
1 (12-ounce) bottle ketchup
1 tablespoon Worcestershire sauce
Sea salt and freshly ground black pepper
Meatloaf:
3 slices white bread, crusts removed, torn into chunks by hand
1/4 cup whole milk
1 1/2 pounds ground beef
1 pound ground pork
2 eggs
Leaves from 2 fresh thyme sprigs
Salt and freshly ground black pepper
3 to 4 bacon slices


Preheat the oven to 350 degrees F.
Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.

Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.

This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small "hamburger" patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.

Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.

Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist!

There are so many ways to make it, but this is my personal favorite:
1 to 1 1/2 pounds ground beef (not browned)
1/2 cup oatmeal or crushed saltine crackers
1/3 cup Vidalia Onion Apple Salsa
2 eggs

Preheat oven to 350.
Mix the above ingredients together.
Place in a baking dish about 2 qt size.

Mix together ketchup (1/2 to 1 cup) with brown sugar to taste. Depends on how much you like.

Spread ketchup mix on top and bake for 45 min to 1 hour.

Here is my family's favorite recipe. It comes off of Quaker Oatmeal container.

prize-winning meatloaf




ingredients 1-1/2 pounds lean ground beef
1 cup tomato juice or tomato sauce
3/4 cup Quaker® Oats (quick or old fashioned, uncooked)
1 egg or 2 egg whites, lightly beaten
1/4 cup chopped onion
1/2 teaspoon salt (optional)
1/4 teaspoon black pepper






preparation 1. Heat oven to 350°F. In large bowl, combine all ingredients, mixing lightly but thoroughly. Press into 8 x 4-inch loaf pan.
2. Bake 1 hour to medium (160°F) doneness until not pink in center and juices show no pink color. Let stand 5 minutes; drain off any juices before slicing.


Servings: 8





variations Customize meatloaf by adding one of the following to meatloaf ingredients:

1/2 cup frozen (thawed) or canned (drained) corn

1/2 cup chopped green or red bell pepper

One 2-1/2-ounce jar sliced mushrooms, drained

1/3 cup grated Parmesan cheese

2 tablespoons finely chopped fresh parsley or cilantro


Sprinkle top of baked meatloaf with 1 cup shredded cheese. Return to oven for 3 minutes to melt cheese.


Spoon heated prepared spaghetti sauce, pizza sauce, barbecue sauce or salsa over each serving.

Meatloaf
2 lbs hamburger or ground turkey
1/2 cup crushed saltine crackers
1/4 onion, chopped
1/2 tsp garlic, minced
2 eggs, beaten
1 can tomato sauce

Topping
1 can condensed tomato soup
2 tbsp. prepared yellow mustard
2 tbsp. splenda brown sugar substitute

In bowl, combine beef, onion, garlic, eggs, tomato sauce and crackers. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 400, drain off grease. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees.

1 pound ground Beef
1 cup oatmeal
salt and pepper to tast
1Tbs.Brown sugar
1 egg beaten
1 dash worshire sauce (excuse the spelling)
mix well put into a loaf pan
lay strips of bacon over it.
pour catsup over all bake at 400 for 40 min or until done.
