Viennese Vanilla Cookies

1 cup unsalted butter, softened
1/2 cup sugar
2 cups sifted flour
1 1/4 cups shaved Almonds (not the slivered almonds, but the flat cuts
w/ bits of brown on them)
1 teaspoon vanilla
1/2 teaspoon salt

Confectioner's Sugar for decoration

Cream butter and add sugar. Add 1/2 cup of flour mixing after each addition. Add remaining ingredients. Shape into a disk and then chill for 30 minutes. You can also put the dough in the freezer at this point.

Begin to roll the dough the dough so that it is about 1/4-inch thick or a little more. Cut with cookie cutters. Place dough on parchment paper or a greased cookie sheet. I prefer using parchment paper. It's just easier.

Preheat oven to 350 degree F. Bake for 12 to 13 minutes or until the edges are a bit brown. You may need to lower your oven to 325 degrees F.

You can also freeze or chill the dough in a log shape rather than a disk. If you do this, simply cut small rounds about 1/4 inch thick and place these rounds on the lined cookie sheet. These bake for 15 minutes. (This works well, if you want to transport dough to a friend's house and have kids form the cookies.)

Once the cookies come out of the oven, either cool them on the cookie sheet or move the parchment paper to a cookie rack. As the cookies cool, but before they're fully cooled, sprinkle with confectioner's sugar.

Arrange on a plate and don't blink because they'll disappear before you open your eyes. Eat.

I'm a guy, a medic student, 21 years old, I cook for myself everyday, so I do need to have 'easy', hassle-free, delicious, great food. For cookies, I always tell my friends, why the stick to the rigid measurements when it's all just supposed to be fun? I usually put 4 cups of flour into a large container, make a well in the center, break an egg into it, a cube of melted butter, and 2 cups of sugar. Slowly twirl the flour from the outside into the well, mix lightly first with your fingers, then slowly use your palm into kneading the dough. If it fells too sticky, add hald a cup more flour, add appropriately until the dough achieves a smooth surface. (You may consider a few other options, like melting chocolate along with the butter, then add 2 table spoons of cocoa to make chocolate cookies, or crush some corn flakes and add into the well before kneading, or even hazel nuts. Best- add all 3 additional ingredient and you'll get crispy, crunchy, chocolaty cookies). Mold them into any shapes you want, lay them on a pan slightly swept with oil, bake in the oven at 150 degree celcius for 10-15 minutes. The best thing is, you can do it together with your daughter, you definitely get to spend quality time doing something you both love. Enjoy, and do try it out sometimes.

Easy Ginger Biscuits

2 oz vegan margarine
1 oz sugar
4oz flour
1 teaspoon ground ginger

Blend the margarine with the sugar until it is a smooth paste. Add the ginger and flour and blend thoroughly. If it too dry add a teaspoon of water - it should come together in a dough. Roll out on a floured surface and cut out using a cookie cutter. Place on a greased baking sheet in a 200 degree oven for 10 minutes or until golden brown.

Tollhouse cookies are easy and on the back of any chocolate chip package. Even the generics have their own brand.

Or...as said above, go to allrecipes.com and put in any kind you want. Pick the easiest one.

In a big pan that is coated with butter, put in 10 cups Corn Flakes.
Pour the above mixture over the Corn Flakes and stir with a large spoon that is coated with butter. I have even coated my hands with butter for the last of them to be put on wax paper so not to burn my hands as it is still very hot.
Stir until Corn Flakes are covered. Spoon out on wax paper and let cool.
