Traditional Eastern European flavours abound—dill, pickles and sour cream—but the kitchen gives everything a contemporary spin. The interior, too, is thoroughly modern: all white walls, exposed beams and chandeliers on fibre-optic strands, designed by Seth Stein, who counts the former cabinet minister Peter Mandelson among his clients.

Of course, eating is only half the fun in a Polish establishment. Enjoy an aperitif or a digestif in Baltic’s striking bar, which boasts a mind-blowing array of flavoured and infused vodkas, served with a flourish.
