80 proof roughly translates to 40% of the volume of the bottle being alcohol. The other 60% is water, some flavor compounds, all that stuff that makes the liquor what it is.

All liquors go through very similar fermentation, distillation and aging processes, and for several reasons, (many of them chemical and microbiological) that's where it almost always ends up.

+ that is true with the cheap and mass produced stuff that you are getting. My shelf has the whole range up to 190 Proof. Just shop a little and have some variety.

i believe that for kentucky bourbon,by federal law,it cannot be called bourbon unless it is 80 proof...the rest is probably due to popularity.

Because thats whats the most popular. Also, Alcohol is an acid and more than that can cause pain ane even damage to throat and stomach tissue.
