good for him! a diet is not easy - trust me. If he sticks it out after a while he will get used to it.
Now as for food to lose weight, there always needs to be fruit or vegitable with whatever he's eating. Throw in a cup of juice every meal if you can too.
Breakfast:
Oatmeal with fruit, healthy cereal with fruit, if he wants meat or eggs, they do have a little carton that has (i think 98% egg whites or something) but its alot healthier than regular egg. Use that with pam spray (instead of oil) and he should be happy. Breakfast is important - let him eat well or he will be hungry after an hour.
Lunch:
Give him a salad with grill chicken or even shrimp whatever as long as its grilled. Improtant note - salad is only as healthy as the dressing. stay away from cearer or any that looks creamy.
Mabey a healty sandwich, watch out for the mayo thats whats going to get you. They now have fat free mayo, use that for everything, he won't know the differnce (my girlfriend did that to me). you can make any sandwich with it, even tuna. He will be very happy. Fruit, Fruit, Fruit! no chips add fruit.
Dinner: This is easy
Vegitables is the key here. Find all the vegitables that he likes and utilize. Stay away from potatoes, its starchy.
I think as a guy, he needs his meat here. So Grill up some chicken or bake some fish, stick with thous two as much as you can. They even have chicken without skin that they sell in bags, use that anyway you want.
There are many differnt dishes you can make. Just go to the supermarket and take the time to look around - so is so much you can do. Use you imagination.
Oh one more thing. He needs to snack - its okay let him do it. But give a healthy snack. I incourage it.
Good luck
P.S
a walk now and then would help alot if he doesnt exercise

Cut out all red meat-including Pork which is red meat for red meat is marbled-can't see the fat. Bake(NO FRYING) Chicken and Turkey and Fish, Can eat all the Vegetables best is fresh and frozen for canned have way too much salt. But no cheese and butter sauces-unless you use low fat cheeses. Also switch to SKIM MILK and cottage cheese and Cream Cheese rather than other cheeses for much lower in fat. Check under Contents when you buy Grocries-Calories and the Fat and the Sugar Content. Well, for breakfasts, you could have some fresh fruit or a homemade granola bar. Oatmeal is always a hit too and super cheap. Eggs would be good for you as well as lowfat yogurt. Lowfat muffins are easy to make and taste great if you warm them up so they are soft again. Pancakes freeze well and can be reheated. You can buy whole wheat blueberry kind that are super good! For lunches, you can have whole wheat sandwiches or wraps with low calorie yogurt or pudding. Ramen noodles are not very healthy, but super cheap and you can make them healthier by adding fresh vegetables or leftover chicken. You could also make some instant mac and cheese. Snacks are very cheap to have and can include granola bars, low calorie fudge pops, fresh fruit, celery with peanut butter, cheese spread on crackers, popcorn, trail mix, etc. Dinners are a bit trickier to make very cheap but stick with pastas as they fill you up, come in many different kinds, are easy to make, and are very very cheap! You can add virtually anything to them to create fantastic recipes! You can add in fresh vegetables and any kind of meat that is on sale at the store. Rice is a great side dish as well as seasonal vegetables and fruits.

To gain wait, eat lots of complex carbohydrates like whole grain bread, oatmeal, potatoes, and pasta.
To lose wait, try to limit the carbohydrates, but when you do eat them, only eat whole grains. Also, the more veggies, the better.
Try sauteeing garlic with olive oil and then add your favorite vegetable with some grilled chicken or fish.

Chicken breast in the oven and white rice.
A good thing too is a crock pot. The meats come out juicy without having to put in extra oils and stuff.

In the superstore, fruits are usually chosen far too soon. Some are rocks, many are bad. Some of the fresh vegetables are generally right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.
