I make sauce for pasta with the soy chorizo.
I use 1 link of chorizo with 1 bag soy burger crumbles(i'm a veggie, but you can use hamburger meat)
1/4 yellow onion
1/4 green pepper
1 clove garlic
salt and pepper to taste
I saute all this together, throw in 2 cans of stewed italian style tomatoes, 1 can water and simmer on low for about an hour
It's so good over any kinda pasta or rice!!

Chorizo and Eggs Recipe
1/4 lb of Mexican chorizo sausage, removed from sausage casing
Olive oil
5 to 6 eggs
3 Tbsp raisins - soaked in water for 15 minutes and drained
Salt
Tortillas - optional
Cilantro - optional
1 Heat a large skillet on medium high heat. Depending on the chorizo you are using, you may want to add a tablespoon of olive oil to the skillet. Whole Foods' chorizo is quite lean and needs the additional fat from the oil. Traditional Mexican chorizo from a regular butcher has much more fat and does not need additional oil. Break up bits of chorizo into the pan. Use a wooden spatula to break up the pieces of sausage. Add the raisins. Stir until the sausage is cooked through, though not necessarily browned. If you are using regular chorizo, and not lean chorizo, drain the excess fat from the pan before proceeding.
2 Crack the eggs one at a time, into the pan. Break the yolks and stir the eggs into the sausage. Add a light sprinkling of salt. Stir constantly until the eggs begin to set, but are still moist. Remove from heat
Serve immediately with a side of warmed corn tortillas and cilantro as a garnish.

A type of "pigs in the blanket" mexican style.
Cook the Chorizo and drain off the fat.
Place aside.
Scramble three to six eggs and then add in the Chorizo to the eggs.
Warm taco shells in the oven for 2 minutes at 300 degrees and then fill each shell with the Chorizo, eggs, and top with your choice of cheeses.
Bend the shell in half. Or keep it open-face. This is a very good layer type dish.
Bake in the same oven 3 more minutes or until the cheese melts.
Top with lettuce or other veggies and your choice of hot sauce.
Excellent for a Saturday morning breakfast.

Scrambled Eggs with Chorizo Sausage
10 large eggs
1/4 cup milk, half-and-half, or heavy cream
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
2 medium-sized cooked chorizo sausages, skin removed and cut into a 1/4-inch dice
In a medium bowl, whisk together the eggs and milk and season with salt and pepper.
Heat 1 tablespoon of the oil in a medium skillet over medium heat. Add the chorizo and cook, stirring, until just beginning to brown, about 5 minutes. Scoop the chorizo out of the skillet with a slotted spoon and transfer to a plate. Wipe the skillet out with a paper towel.
Return the skillet to medium to medium-low heat and heat the remaining 1 tablespoon oil. Add the egg mixture and cook, stirring, about 3 minutes. Add the chorizo and cook, stirring, about 2 to 4 minutes more depending on the desired firmness of the eggs. Serve immediately.

Baked Penne with Chorizo and Taleggio
11 ounces penne
8 ounce carton mascarpone
2 teaspoons whole wheat mustard
4 scallions, thickly sliced
9 ounces chorizo sausage, cut into chunks
7 ounces diced taleggio cheese
salt and ground black pepper
Cook the pasta in a large pan of boiling. Preheat the oven to 400F. Drain the pasta well and return to the pan. Mix in the mascarpone melts and coats the penne. Stir in the scallions, chorizo and cheese and season; then turn the mixture into an ovenproof dish. Bake for about 20 minutes until the top is crisp and golden brown. Serves 4.

Ok first chop some onion not much...then fry it a little, then Add lot's of chop tomatoes in big pieces then 2 eggs and the chorizo , black pepper and salt you can either eat it with toast or like a sandwich...if you want to prepare it as a meal ....you can do the same besides the egg served with White rice.............or make all together the sramble egg, chorizo, rice , all cooked and join them together and also you can combine these with ham and sausage and it will be the famouse spanish dish call PAELLA
